Bag Description: Curing Salt (Prague Powder #1)is a proportionate measure of salt and nitrite regulated by the FDA and USDA and is necessary to help prevent food poisoning. 4 Oz. of cure is enough to cure 100 lbs. of meat. Curing salt, also known as Prague powder #1 or Pink Insta-cure, is a combination that is 93.75% salt and 6.25% sodium nitrite or sodium nitrate. It is used in the preserving and curing of meats, and in sausage making. The nitrate component inhibits the growth of bacteria, specifically botulism, and helps preserve the color of cured meat. Used it for several months now. Primarily to make back bacon and kielbasa. Adds that piquant flavor. Be sure to follow curing instructions in your recipe.

Have used once to replace Tenderquick in a cured pork recipe. It allowed me to reduce the salt level in the final product and still have the degree of cure I wanted. Also, it eliminated the nitrate, which was in Tenderquick but not in this product, and was not needed in this curing method.
