Usually being a meat and potatoes kind of a person, I never gave much thought to my veggies like I should. I always thought they were boring. Not until I purchased this book. Curtis Aikens makes tremendous strides in making vegetables the "all" important part of your meal, and sometimes, they are the meal. Not only does he explain the particular vegetable in detail, he gives you simple, easy and delicious recipes. Thanks to Curtis, I can now eat my veggies and like them! Bravo, Curtis!
