Fondue without all the to-do,
By -Accessibility. Being basically one piece, there are no accessories, racks, lids or wires to worry about. Things like preparation and cleanup are probably only slightly faster than a full-sized fondue kit, but the psychology is different- it's easy to justify starting a quick mini-fondue for dessert or a snack, without having to feel like you're throwing a full-fledged party. -Fire good! Cooking with an open flame gets the bowl hot very quickly, and there's something primal and satisfying about having a fire safely flickering away, right on the tabletop where you're eating. -Storage. It's as compact as a tall coffee mug, and stows along with a candle and two forks pretty much anywhere. If you're sneaky, you can probably hide it at work. But there's always downsides, and these are what I've run into: -Heat dispersion. It's just a ceramic bowl, not a double-boiler, so the hot spot around the candle flame is fairly concentrated. I had to experiment with amounts of milk and (ugh) oil to achieve a desirable consistency without scorching, and, of course, you have to stir as you go. When the fondue level is starting to hit bottom, it's a good idea to snuff the candle entirely, or you'll be scouring burnt chocolate out of the bowl. -Molten wax. Tea candles come in a shallow metal cup, and if you're not careful, you'll have more than spilled chocolate or cheese to clean up. The included tiny tea candle, used twice, by the way, looks like it's already half gone. So, might want to lay in a cheap supply of those. -Another excuse to dip everything in melted chocolate. At least buy some fruit to balance out the marshmallows!
