A true breakthrough in vegan cheeses! Pangea is proud to offer the FIRST cheese alternative that actually melts into a *stretchy* consistency like that found on dairy-cheese pizza. It makes amazing vegan pizzas and offers authentic dairy-cheese consistency when melted in just about any recipe. Awesome! And for those of you who already eat soy products 10 times a day, this product is not soy-based, for a change. No MSG. Available in 8 oz (225 g) bags in Mozzarella or Cheddar.

Storage: Always keep refrigerated. For optimum quality, use Daiya within 1 week of receiving it. It may also be frozen upon arrival to extend its shelf life.

Ingredients:
Italian: Filtered water, tapioca and/or arrowroot flours, non-GMO expeller-pressed canola and/or non-GMO expeller-pressed safflower oil, coconut oil, pea protein, salt, vegan natural flavors (derived from plants; no MSG), inactive yeast, vegetable glycerin, sunflower lecithin, calcium citrate, xanthan gum, citric acid, vegan bacterial cultures.

I've been avoiding trying this for a long time, as I never had faith in cheese alternatives. I made a scrambeled tofu breakfast burrito today and mixed this in sparingly. It melted beautifully, and the taste wasn't overwhelming. I thought the consistency was exactly like traditional cheddar.

I tried it unmelted and although it was not unpleasant, I would not just randomly throw it on a salad. In my opinion, this is best used for melting. I wouldn't use tons of it, either, for example, as a base for mac & cheese. I think it's great as a topping for a veggie burger, or anything else that needs a touch of melty goodness.

Update 1/17/11: I've gone back & forth on this product dependent upon what the application was. I've pretty comfortable saying that using it as a condiment, rather than basing a dish around it, is where the strength lies. I would not use it unmelted.

Being allergic to dairy, gluten and soy really limits my options. This cheese is amazing! I eat it by itself and melt it for pizza and mac and cheese. I use Rice Milk and olive oil when melting it and it comes out Oh so perfect! I found this about two weeks ago and can't stop making mac and cheese!

Daiya is the best (possibly only) cheese alternative for those of us who are allergic to dairy, gluten, and soy (it's also vegan). People used to real cheese will find the flavor is pretty close. You must melt Daiya shreds because they doesn't taste very good right out of the bag. It seems to need a little longer than regular cheese to melt properly, so factor that into your cooking time.

What I liked even more were the pepperjack shreds and the brand-new wedges: Monterey Jack, Cheddar, and the best, most spicy and flavorful one, Daiya Jalapeno Garlic Havarti Style Wedge Cheese, 7.1 Ounce -- 12 per case.. They are awesome for mac-n-cheese, pizza, enchiladas, sandwiches, etc. While the shreds need to be melted to get the right flavor, the wedges don't have to be. Just slice or scoop the wedges and enjoy!

Companies are slowly starting to include Daiya in their vegan frozen food products, like Amy's Kitchen Gluten-free/Dairy-free Mac and Cheeze, and Garlic Jim's Vegan Pizza. Both are tasty, and I hope to see other companies include Daiya in their products soon so I can actually eat them.

Whatever you do, avoid Road's End Organics "Chreese" products like Road's End Organics Mac & Chreese®, Organic, 6.5-Ounce Boxes (Pack of 12). Their fake-o "Chreese" tastes like seaweed mixed with mustard and garbage!

UPDATE: As of October 2013, Daiya is now selling Swiss, Cheddar, and Provolone in convenient slices! They're also selling different varieties of flavored and original cream cheese that are absolutely excellent.

UPDATE! 6/11/2012 - STOP THE PRESSES!!! I wrote the review below several months ago when Daiya Cheese first hit the market - it is an "ALMOST BUT NOT QUITE" sort of product and nothing to write home about. My lukewarm response for this product still stands, but I have to say that Daiya has come out with a new non dairy cheese product that is considerably better than this one. Today, I was at the store and noticed an addition: Daiya Havarti Style Wedge - Jalepeno Garlic flavor. WOW! This stuff is really good! The texture is nice and creamy, and the flavor is really CHEESY! I fed some to my family - who are not allergic to dairy, and NONE OF THEM KNEW THAT IT WAS NOT REAL CHEESE! It is good enough to satisfy the cheese lover in all but a genuine cheese conesiour. Havarti Style is not yet available on Amazon, but I am sure it will be here soon. Meanwhile, you can probably find it at your local health food store. I can tell that I will have a problem with this because it is expensive, and I might just eat too much of it! It is still a carb food and as such needs to be eaten in moderation, but the really good flavor might make moderation a challenge. Now, I am looking forward to the next thing to come from Daiya. I am dreaming of dairy free sour cream, cream cheese, greek style yogurt - need I say more? :-D

ORIGINAL REVIEW: This is the very best fake cheese I have ever tried. But, the operative words here are "FAKE cheese". It is pretty good for what it is, but it is NOT actual, authentic CHEESE!

The things I like are:

1. It melts.
2. It is stretchy and chewy.
3. It has a reasonably good flavor.
4. I am not allergic to it.

I`ve been using Daiya for maybe 2-3 years I`m lactose intertolerant, look at all the different dishes I can make/eat if this didn`t exit. Daiya taste is very real the texture isn`t bad either, much heathier than the real thing,it stretches and melts and is gooey, it`s a bit overpriced in the stores, but at least I can eat/make all these different dishes now, lasagna, mac cheese, in the salad, eggplant parmesan, any dishes that require cheese, and it comes already shredded, how great is that also it doesn`t have all the fat and unhealthy cholesterol that regular dairy cheese has when I serve this to other people they say they love it, and can`t tell any difference. 5 big stars ***** Healthy Alternative.
