One of my favorites, good for so much more than boning, November 2, 2006

This is my next most heavily used knife after my chef's knife. The handle is perfectly comfortable, the balance is great, the blade is sharp and hard.
Best, this knife is suitable for a far wider range of cutting and trimming than mere boning. I didn't set out to buy a boning knife, and so I was concerned that this knife would sit unused. But whenever I have a task that calls for a small to mid-size blade, this is what I grab. I've all but forgotten my paring knives.
I picked this up when I found it at a local close-out store, having recognized the brand. I wish I could have bought more of the DBK range, because the quality of everything I saw seemed well above the clearance prices.
