Celebrity chef Daniel Boulud has been involved in so many food-related endeavors: Boulud is the owner of four highly renowned East Coast restaurants, most notably the four-star Daniel located in Manhattan; a Chef of the Year as bestowed by Bon Appetit; the author of several cookbooks; a guest chef on many TV and radio programs; a guest lecturer at many culinary institutes; plus he offers his own line of Caspian caviar and smoked Scottish salmon via mail order. It should be no surprise that Boulud is venturing into the cookware sector to endorse a line that meets his standards of quality and performance for his signature style of French bistro cooking.

Attractive enough to cook and then serve from, this 5-quart oval roasting pan is the ideal size to cook a fisherman’s stew, braise two to four quail, or bake a hearty serving of seasoned potatoes with cheese. Made by prestigious French cookware manufacturer Sabatier under the Daniel Boulud Kitchen label, this roaster is constructed of heavy cast iron, which absorbs and transfers heat evenly for slow uniform cooking of meats and vegetables. The pot is coated with durable enamel in vivid color for a lifetime of protection and for easier cleaning. The original cast iron surface peeks through along the rims of the pot and the lid to more closely resemble rustic French countryside pottery from generations past. The cast-iron lid also has an exposed unenameled handle and has "flavor beads", or tiny raised balls, on its underside to help steam condense and retain moisture and flavor when using the roaster to braise meats or vegetables. Sturdy ridged handles on either side of the roaster prevent slipping but do require potholders as the cast iron retains the oven’s heat. I had looked at the le Creuset pots and found them ludicrously expensive (overpriced in my view). A cast iron, enameled pan is not made of unusually expensive materials and does not seem likely to require an unusual amount of processing, so it probably should be fairly inexpensive.

The Boulud roaster, which I believe I read elsewhere is made by Sabatier, is an excellent enameled iron pot, with simple but functional handles and lid. I got it for poaching chickens, and it is just about the right size for that, though if I had my way, I would like one of the same cross-section but with higher sides so that it would hold a roaster or hen comfortably. The oval shape is nice for reducing the amount of liquid necessary for poaching, which requires less reduction at the finish.

The interior is enameled as well, which was not clear in the description.

I was looking for a roaster that was sized to receive an Oven Stuffer Roaster for purposes of making Salt Baked Chicken. I started out with the 3-quart size which was too small, but the 5-quart is just about 1 inch larger around than an Oven Stuffer Roaster which is just about ideal. I agree with previous reviewer that the height could be slightly higher, but it did barely clear "the bird". Nicely designed cooking vessel for price charged. Seems ideal for chicken/fowl. Interior dimensions are 11" long x 8 1/2" wide x 4 1/2" high.
