Book Description

Prestige Des Grands Chefs August 9, 1996
Prestige des Grands Chefs More than a century ago, the techniques of modern French pastry were developed. Since that time, the paper cone has been one of the basic tools of the «pätissier». It is the simplest of all tools — a triangle of parchment paper — Yet in the hands of a trained professional or amateur the paper cone becomes the pen of a writer and the brush of an artist. The stunning decorations that are applied with the paper cone are literally the «icing on the cake». More than a technical manual this comprehensive work details every style and technique for creating beautiful decorations with a paper cone from learning new designs to the application on culinary works of art. The information in this book will help the novice get started and inspire the professional to improve his or her technique and to express this art in new ways. The first section of this treatise on the paper cone includes the basic techniques for using this simple tool. By following the progression of the 120 practice sheets that make up the major portion of this book, you will obtain the skill to pipe a wide variety of decorations. These practice sheets also have been designed to be used apart from the book to trace the designs over and over. After you have mastered the designs on the practice sheets, the last chapter shows a wide range of finished works of pastry art as well as ways of using the paper cone to pipe designs for plate presentation and other applications. Food professionals and enthusiastic amateurs at all levels of proficiency will be guided to improve their results. For very little cost in equipment and materials, you’ll produce spectacular decorations.

5.0 out of 5 stars Practice Makes Perfect, September 3, 2008

OK, you can make, assemble, and decorate a cake or plated dessert. One teeny, tiny, problem: someone in the next room says: `by the way, can you write HAPPY BIRTHDAY FRED' on the cake? This is a problem for both amateurs and pros, inasmuchas your efforts look like the doodles of an 8-year-old. Happily, this book will train you, of either ilk, to do this task properly.

Do you remember those practice books from grade school, where you filled out endless worksheets to teach you how to do handwriting? Well, this book is the same thing, except for cakes and desserts and things for designs, words, etc. Note: this is NOT complete by itself. You will also need the companion volume Décomaster: Decorating with a Paper Cone, 120 Practice Sheets of practice sheets. I also assume that you will need a few clear acetate sheets for practice.

This rather remarkable book has 3 sections. The first goes through the associated practice sheets, one by one, and tells you how to trace the sometimes amazing decos. Second, it has a section of pro-quality showpieces guaranteed to gain you an international reputation should you decide to enter such a pro competition. The most remarkable section is the last and shortest section in yellow pages. It has MANY recipes for many and sundry piping stuffs. This section alone is worth the price of admission, even if you never wield a parchment-paper-piping-cone.

All in all, very worthwhile, and do not forget to also buy the practice sheets.

3.0 out of 5 stars Came without the necessary 8" X16" practice sheets!, September 13, 2005

Beautiful book, but you are advised to have (their spelling) "A very diseful additional tool" --- 120 color coded practice sheets that are to be used apart from the book. Not here, and you can't get them on the web. The publisher, John Wiley, is not up front about this. Shame on them.

The sheets are produced in mini version on the book's pages. You could xerox them, I suppose. It's a major annoyance, though.
