Carrot Cake Muffins for Breakfast

Ingredients: 1 c of oat bran; 1 c whole wheat flour; 1 tsp baking soda; 1tsp baking powder; 1 tbsp cornstarch; 1 tsp allspice; ½ tsp cinnamon; 2/3 cup grated carrots; 1 cup water; 1/3 cup maple syrup; ¼ canola oil.

Directions: Combine all dry ingredients in a large mixing bowl along with the graded carrots. Then add all the wet ingredients, including the oil. Mix completely. Preheat oven to 375 degrees and pour the batter into lightly oiled muffin tins. Bake for about 25-30 minutes.

I was so excited to try out the vegetarian recipes. Being provided with the exact ingredients to create delicious vegetarian meals assisted me with making my daily life chores every bit more enjoyable and less time consuming. I look forward to trying out different vegetarian ingredients, from this book, to create delicious and appealing meals on a daily basis.

This book will be good for persons who like using Indian spices and cooking styles. I did not find it helpful because where I live I already use Indian spices and styles in my vegetarian meals and so there was not really anything new for me in the book.
I also did not like the fact that some of the recipes were written across the page instead of the ingredients being listed down the page.

The book does contain a good number of recipes and covers the main meals of the day.

I'd give it 0 stars if I could!!! Not only are they cutting down our Rainforest at an alarming rate which is home to Orangutans, they and most other makers I'd the food and drink we consume are poisoning us with GMOS!

French born and Los Angeles raised, Madison has been a life long vegetarian, and vegan for the last five years. She has a true passion for sharing her years of vegetarian cooking experience and knowledge with others.

Madison learned many of her vegetarian principles as a child. Growing up in Beverly Hills, Madison had a small vegetable garden and that is where the fun began. She was raised on fresh, green juices and seasonal produce which cultivated the relationship she maintains with food today. She spent many years in the restaurant business with positions that ranged from cocktail server to food and beverage manager at a five star hotel. Not long after graduating with her culinary degree and working in the restaurant business, Madison followed her true passion of writing recipes and cookbooks.

Madison currently still resides in Beverly Hills, CA and when she is not writing she enjoys, volunteering and cooking with family and friends. She also spends a lot of her time updating her website
