From the Author

I learned how to bake traditional cookies from my Polish Grandmother, Busha Masur, and my Italian Grandmother, Nonna Moretti.  When I got older and started my own family I didn't have the time to bake the traditional rolled dough cookies of my childhood.  

I was so happy when I discovered icebox cookies!   I could spend some time with my daughter on the weekend preparing and freezing logs of cookie dough that my family could easily slice and bake for weeks to come.  So when I bake cookies now I feel like I'm following in the tradition of my Grandmothers while making a new tradition with my daughter.   Baking together really is a wonderful way to make some happy family memories :)

I have been a fan of the author since I picked up her icebox cake cook...amazing! This book is no different and has some great recipes. My favorites are the cherry cookies, and the lemon cranberry ones. My wife loves the black and tan cookies as they remind her of childhood back in New Jersey. What I also appreciate is advice on which cookie dough's work well in the freezer and which ones won't work. Saves me a lot of hassle so I don't have to learn through the school of hard knocks.

When I was a kid my Mom made tons of icebox cookies...and she didn't have a refrigerator! She would make them in the late fall through to early spring when she could cool the dough in our dairy (the place where milk got separated and food got stored). Once chilled, she'd bring the dough into the kitchen, slice it up and bake yummy cookies.

My favorite was Cherry Icebox Cookies and she made me lots of them, especially around Christmas time. When I grew up and began cooking myself, I often made Icebox Cookies of one sort or another. They are easy to make, bake and freeze well and are really delicious. I had never heard of either the Cinnamon Sugar or Lemon Pecan recipes before but they both appeal to me and I'll definitely be trying them in the next few days. I love to bake so it will be fun to try these two new recipes and my husband will love having the cookies around.

This is a great book with wonderful recipes. Another winner for Lori!

Although I've been baking for years I've never made icebox cookies and had no idea how to go about it. This book is as idiot-proof as it gets. Not only does the author explain exactly how to mix up the dough but she also gives exact instructions on what to do if you're going to make the cookies straightaway and what to do if you plan to freeze the dough. (Unless you follow the correct freezing procedure the dough will be spoilt). The chewy butterscotch cookies were a huge success and I'll definitely be making them again. Mmm...!

I've been baking for years and this was an eye-opener for me. There's a lot of good information here.
I guess I'll just have to work through all the recipes. I've started at the beginning and the Almond Delight Cookies are already in the oven.

How do you make, freeze and bake cookies? Buy this book and you will never have another question again. Not only does Lori give you exceptional recipes but she also gives you the proper instructions for freezing and defrosting. I never knew that food got a freezer burn but Lori tells you how to avoid that.

Lori has a real gift for writing - she transports you right back into her Nonna's kitchen or that of her polish grandmothers kitchen. Wow wow and wow. Another winner from Lori.

I used to make a lot of cookies (biscuits) and somehow got out of the habit, and want to start making them again rather than buying additive-laden shop bought ones. I didn't really understand the 'icebox' part of the title, but got this book because I have Lori Burke's other one on fridge cakes, and am enjoying making the recipes.

Now I see what it's all about - I had never thought of making batches of cookie dough, making it into logs, freezing the logs, and then thawing, chopping into cookies and baking them at another time. If it had occured to me, I wouldn't have known which types freeze best and how long I could keep them for - the answers are all in the book.

It's a super idea, and a good one to use too when the grandchildren are around and want to do some baking - we often run out of time to do things from scratch, so this is a good half way point. It's also nice to do when coming back from a cold walk - a short time later, we are sitting down with a cup of tea, enveloped in the aroma of freshly baked biscuits!

I've only tried two recipes so far as I haven't had the book for long, but intend to have a go at several of the others.

I was so happy to see another book from Lori Burke and snatched it up immediately! I absolutely love her Refrigerator Cake recipe book and now her Delicious Icebox Cookie Recipes book is a fabulous addition to my cookbook collection.

My favorite cookie in this book is the Coconut Macadamia Icebox cookie. But the Cranberry Walnut and the Rum Chocolate are so delicious too! Actually all of the recipes in this book are so easy to make and so tasty! My entire family stands around the kitchen waiting for them to be made!

I really appreciate Lori's attention to detail and tips about how to make these cookies. Often cookbooks leave out important steps and then the creation is not quite what is expected. This cookbook leaves out nothing, ensuring success.

I know that that like Lori's other cookbook, this is one that I will be referring to again and again!

In Best Ever Christmas Dessert Recipes I wanted to share some of the traditional Christmas dessert recipes from my childhood along with more contemporary recipes that I collected throughout the years. You'll find Christmas cookie, cake, bread, dessert and drink recipes. Try the Italian Hot Chocolate ~ it's DELICIOUS and so different from standard hot chocolate!

Poke Cakes are so much fun to make! You bake a cake and poke holes into the top. Then you pour Jell-O gelatin or Jell-O pudding or homemade fruit syrups and purees over the holes and chill the cake. After that you add sliced fresh fruit on top. Toppings include sweetened whipped cream or Cool-Whip or anything you'd like. You're only limited by your creativity with Poke Cakes. Kids also LOVE helping to make these cakes!


Dump Cakes are cobblers and they are so delicious ! The Dump Cake recipes are simple, take 5 to 10 minutes of prep time and just 45 minutes to 1 hour to bake.

I also enjoy fast, easy-to-make Refrigerator Cake recipes that I can whip together quickly when I get home. Finally I published my favorite recipes for slice and bake cookies that are quick, easy and delicious.

I love to make Ice Cream Cakes for birthdays and special occasions. My family loves them and there are never any leftovers. You can't beat ice cream, cake, whipped cream and your choice of ice cream toppings and nuts. Mmmmmmmm!!


I love quick and easy Brownie and Bar recipes that I can make on weekends for my family. I've included both bake from scratch and cake mix recipes in my Brownie and Bar Cookbook.

I started making Icebox Cookies years ago. I wanted to have cookies in the freezer when my kids got home from school and we got home from work. I found it was so easy to make roll cookies from scratch and they were much healthier than store-bought cookies.
