We have used this knife in our kitchen for the past 4 years now. It is used mainly to cut chickens down from whole birds to 1/8ths. This thing has held up incredibly well. We do roughly 3,500lbs of chicken each week and only use this knife. I have put it on a grinder a few times to reshape the blade but that comes with hand sharpening a forged knife with a thick heel. For practical uses this is as good or better then any knife I have used (henckels, wustof, etc.)

Back in the day my brother moved to New York and when he came back he gave most of the family members a Dexter 8" in carbon steel in this pattern. It is still one of my favorite knives and with that old carbon steel it is as easy to keep it razor sharp and it is to find it in the sink rusted, but a few strokes on the diamond steel and it's back to it's razor personality. After years in professional kitchens I have used and seen many of the white handled Dexters never like them too much, they were too ugly to steal and too useful for the dishwashers or other who could not yet afford to buy themselves something better. Then a Chef gave me this knife I was not that impressed, I had seen some many of those white handled rat knives and the funky Stainless Steel. I don't know it these knives us the same metal, but these are forged and the quality is worlds better. These are GREAT KNIVES. Easy to keep sharp and easy to live with.(no rust). If you care about thing that are made here in the US and is also very high quality at a very reasonable price this might be it. Most of my knives now are Japanese and European, still a few of these Dexter's are as good as anything you can find any were.

before i got this knife i was nervous but when i got it i loved it besides the weight of the knife its pretty heavy but after using it everyday in culinary school this thing is a beast...and holds an edge really well
