The Dexter-Russell Basics P94802B 10" cook's knife has a black polypropylene handle and a high-carbon steel, hollow ground blade and can be used to chop and slice foods. The blade is made of high-carbon steel, which is harder than low-carbon steel and resists corrosions, stains, and wear to maintain its edge. The blade is hollow ground with a concave, beveled edge for sharpness. The handle is made of polypropylene, which resists impacts and wear, can be wiped clean, and is textured to help prevent slipping. A finger guard helps keep the user's fingers safely away from the blade. The knife measures 15" long overall, with a 10" blade and a 5" handle. This product meets National Sanitation Foundation (NSF) Standard 2 for use in food handling and processing.

I learned about this knife from an article in the NYT by Mark Bittman. It was poorly packaged and arrived with a bent tip. I emailed Amazon, they refunded my money and told me to keep it. I took it down to my shop and re-grounded the point. I own many knives and this is now my favorite. It sharpens easily with a conventional ceramic sharpener. The blade is thin and slices easily through tomatoes to cruciferous veggies. The handle is non-porous and cleans up easily. This blows the barn doors off my fancy and costly knives which require more pampering than my teenage daughter.

Bought this as a gift for my little brother, as he just recently became a line cook and requested a knife. It arrived way faster than I expected (given that it was the holiday season and being shipped to Alaska), the package came in wonderful condition, and the blade was tucked into a thin plastic sheath and wrapped like crazy with brown packaging paper. It was sharp right out of the package and he said it cut wonderfully. Prep was a breeze, he was able to do various cuts with no issues, it was just awesome for him. I will try to come back after a month or two of use and update the review.

I own several knives from this line including another 10" cook's knife that I bought years ago from a kitchen supply store. I love those. Even as I've added much more expensive knives to my collection, my old 10" knife with the white plastic handle is the first one I always reach for.

I recently ordered this one as a gift. When it showed up, the thickness of the spine was significantly thinner than the one I bought years ago. I assume the company has changed their design over the years. I wound up keeping it for myself and getting a different knife for the gift.

Now both 10" knives are in the knife block. Even though the handles are identical, I can immediately tell whether I have the old or new one just by how it feels in my hand. I would still reccommend the knife, but be prepared. If you're an old fan of Dexter-Russell, this is a cheaper version of what you bought 10 years ago.

I learned about these in cooking class. The chef told us they are great knives and you cannot beat the price. She was right. Why pay more for a knife. Dexter knives are heavy and sharp and do a great job.

Inexpensive knife, cuts clean.

As a chef, I will tell anyone that these are the types of knives you are likely to find in most kitchens--at least those in which I have worked. While I proudly own a set of pro series J.A. Henckels knives, I as often reach for the Dexter Russell knives (I have a cooks knife, paring knife, and oyster knife) because they are easier to clean when working with a messy product, and are easier to sharpen if they begin to lose their edge.

I would invest in a whetstone with these knives, and I would learn how to use it. A knife like this that endures heavy daily use will last a great deal longer when properly sharpened every other week.

Additionally, the 10" length is likely far larger than most home cooks are used to--the 8" cooks knife or even a 7" santoku blade might be a safer, more maneuverable option--the most important aspect of a knife, in my opinion, is that it feels comfortable in your hand, lest you risk injury.

I don't mess around when I cook and have no patience for any knife that is less than excellent!

A knife Must be:
Quick & Easy to Sharpen. Many expensive knives are miserable to try to sharpen.

Have just a bit of flex to the blade, this helps when crushing garlic, cutting around bones etc.

Dishwasher Safe. I like the white plastic handle very ergonomic and easy to see that it's clean.

A knife must have a good blade design. This 10" size with a bit of a curve to the edge is perfect!

Dexter Russell 10" Cooks Knife Has Everything I require in a knife.
It's also a fantastic value. I have used many knives that cost ten-times as much that weren't half as good. This knife is so good that I take it when I travel.

I first got one when i worked at a Deli in Baton Rouge La. The owner had bought a few new ones & gave me one he had for yrs. It was a bread knife and it was as sharp as the day he bought it! That was in the mid 80's and when our house was demolished by a huge tree in 2007 someone came in and took a lot of our things including that knife! I plan on ordering another one along with a diamond sharpener that was the best knife ive ever owend & i got it used theyer the best knives on the market!!!

The knife was pretty good for prep work where cuts didn't really matter. It was also very hard to grind it down to a sharp edge. At first I thought I simply didn't know how to sharpen a knife, but I recently purchased a knife with quality steel and I was able to get that one razor sharp and was even able to shave off a few arm hairs with it.

I would recommend this knife to beginners, prep cooks, students, and for household use.
