5.0 out of 5 stars Excellent collection of Healthy Recipes
After reviewing this cookbook, I find it a wonderful collection for someone trying to create a healthy diet! I especially like the divisions of the chapters into a focus on specific food groups: for example "Tomatoes, Peppers, and Eggplants," or, in the fruit section, "Pears, Apples and Avocados." While I have not reviewed all the menues, thus far all include foods that diabetics would prefer to avoid. My wife and I were VERY unimpressed.

Another book that I checked out of the local library and liked so much that I bought it. I'm not a big veggie eater and never have been, but I'm trying to learn to eat healthier. I don't hate veggies like I did when I was a kid, but because I've always preferred other foods, I don't have much experience with cooking them. I also don't have much imagination. This book has recipes from well-known chefs. They are nutritious and not too fancy for my family's tastes. The only negative I have is that the ingredients in many of the recipes aren't things I keep in the house on a routine basis, but, as my husband says, "I know where I can buy them."
It approaches the vegetables in groups, an interesting approach for me, and gives good nutritional information before giving the recipes, several for each item. With this book, my lack of imagination doesn't hamper our diet.
