O.K. but better books out there. I was really wanting a true recipe book, instead it is a combination of diabetic learning and a few recipes.

I was a newly diagnosed Diabetic and I was under the impression I had to completely change all the foods I was accustomed to eating. My co-worker suggeted this receipe book. It saved my sanity, I thought I could NEVER have another dessert and when I saw the variety of desserts and the vaious meals that did not entail going to the grocery, I was overjoyed. All the menus contained foods I had normally eaten but were utilizing low fat, sugar free ingredients and included items I already had on hand. I also love the exchanges, that made it more appealing and easier for me to count my daily exchanges.

Although I have several cookbooks that contain diabetic recipes, I refer to this one 90% of the time. The recipes are quick and easy to prepare, and taste great! Our entire family raves over the dishes prepared using Ms. Lund's recipes. I also have her other cookbooks--they also contain diabetic exchanges for each recipe. There are variations on some of the recipes but none are duplicated.

Anyone concerned about eating healthy but good needs this book. My husband is diabetic, so we have to watch what he eats, but before we purchased this book, our meals were pretty bland. With Mrs. Lund's recipes, we are now eating healthy but wonderful dishes. I recommend recipes out of this book to everyone I know.

I found out recently that I have type 2 diabetes. With a meal plan from my nutritionist and this book I am able to make meals that are good tasting and fairly quick to fix. The break down of serving sizes and exchanges has helped me plan meals that are interesting and stay within my exchanges. My only problem is the use of mainly processed foods in many recipes. I would like to find a book using more fresh ingredients.

The recipes are for "normal" food (as opposed to the kind of cookbooks that offer extreme ingredients that you must move to Manhattan to aquire!). He has loved every single thing I've prepared using recipes in this book. Lots of variety, great nutritional info, and easy preparation. He's a Type I diabetic, and has been for over 40 years. Before I started cooking for him when we married 4 years ago, he had no idea food that's good for him could be GOOD, too! And, this cookbook was one of the first I used to prepare new recipes for him that didn't require modifications to keep his blood glucose in control.

Since I am diabetic and overweight I have tried all the classic diabetic recipes and found them all to be tasteless and time consuming to prepare. Ms. Lund's recipes use products you have on hand and the resulting meal has both taste and is quick to prepare. It is important to me that I don't have to spent hours preparing it and it satisfies my hunger for things I shouldn't have. I highly recommend the book to anyone who is diabetic and especially those who are classed as "border-line" diabetics.

I really like this book and would recommend it to anyone who is especially just starting to eat a low fat/low sugar diet.
It may not be "gourmet" food, but it is great tasting, easy to prepare food...and you can find all the ingredients in your local markets.

One of the best parts of the book, believe it or not, is the information in the beginning pages on how to substitute low fat ingredients for fattening ones! You probably would never think the low fat substitutes could taste so good but THEY DO!!!

Try the book, you won't be disappointed.

This is an excellent cookbook to have on hand, whether you have diabetes (like my partner) or you're trying to change your diet to lose weight (like me). All of the dishes I've tried are very simple to make, call for readily available ingredients, are very tasty, and none have left me feeling like I'm "on a diet." She has all kinds of helpful hints and tips for cutting fat and calories. One of the things I especially appreciate is that so many of her recipes are designed for four servings. There are only two of us in my household, but she uses a 8" square pan to cook a lot of these in specifically so you can cut down the middle and easily measure out the four servings. She's marked the dishes that freeze well so you can set the other two servings aside and freeze them for a quick dinner in the future. I cannot say enough good things about this cookbook and would recommend it to anyone!
