4-Layer Mexican Dip

8-oz. pkg. cream cheese, softened
15-oz. can chili with beans
16-oz. jar salsa
8-oz. pkg. shredded Mexican-blend cheese
tortilla chips or crackers

Spread cream cheese into the bottom of an ungreased, microwave-safe 11"x7" glass casserole dish. Layer chili, salsa and cheese on top. Microwave on high for 5 to 7 minutes, until hot, bubbly and cheeses are melted. Serve warm with tortilla chips or crackers for dipping. Makes 4 to 6 servings.


Prairie Bacon Corn Chowder
 
1 lb. bacon, chopped
4 c. potatoes, peeled and diced
2 c. onion, chopped
1/2 c. water
2 10-3/4 oz. cans cream of chicken soup
2 15-1/4 oz. cans corn, drained
16-oz. container sour cream
2-1/2 c. milk

In a skillet over medium-high heat, cook bacon for 5 minutes; drain. Add potatoes, onion and water to skillet. Cook for 15 to 20 minutes until tender, stirring occasionally. Drain; transfer mixture to a slow cooker. Combine remaining ingredients; add to slow cooker and stir to blend. Cover and cook on low setting for 2 hours. Makes 10 to 12 servings.

I'm on a shoestring budget and most of my other cookbooks aren't exactly pocketbook friendly - you know how it is, you're always missing a couple of the most important things to crank out dinner and it's stuff you can't substitute or scrounge up cash to go buy. This cookbook has changed that for me. The ingredients are things the average person has stocked in their pantry or can fudge with what they've got. You just have to add some sort of meat or veggie to make it complete. We have even planned menus for family gatherings with this book. It makes them cheap, tasty and no fuss now. I don't have to break the bank to make several side dishes and a couple different main entrees to make everybody happy. While quite a few of the recipes remind me of food my grandma would cook for a crowd, they still taste great and provide inspiration on those days when you don't have much laying around to make dinner. Definitely a keeper. I can't wait to try more Gooseberry Patch cookbooks!

I was seriously impressed with the recipes in this cookbook. The meals are indeed cheap and contain regular, everyday ingredients most of us have in our cupboards already. I love how the catagories were separated so that if you wanted a slow-cooker meal you could go right to that section. I also love the section entitled "Budget-friendly Gatherings"- meals for many without breaking open the piggy bank. There's a section entitled "Penny-pinching Pantry Staples" that includes recipes for making your own homemade sauces, spice mixes, breads, jams and more. Many of the recipes have 5 to 8 ingredients at the most. I have made quite a few recipes from the book including the Curly Noodles Supper, Hamburger Cream Gravy and Creamy Macaroni & Beef. Each recipe I have made has cost under $5 and fed my family of 5 plus leftovers and has been two thumbs up, yummy-delicious. For those that like to cook on the cheap without skimping on the flavor, this is definitely a cookbook that should be on your kitchen shelf.

Checked out this book from the library and tried several recipes. Some were above average, some were outstanding! Some of the ingredients also cost more like 35 dimes. But on the whole, I must admit that I really wanted to own this book for myself. Some of the recipes from this book will be passed down to my kids and maybe their kids too. I'm also ordering 4 extra copies to keep on hand for wedding gifts. Some of the young couples I know could use some help feeding a budding family on a budget.

Love this! It's great for anyone who needs a quick, delicious and easy-on-the-wallet recipe. My husband is a picky eater, and he hasn't complained about one thing I've made from this cook book. It's so simple that I can take a look at the recipes last minute and have dinner ready within an hour. Definitely worth buying.

Most of the recipes have much processed food as ingredients. Velvetta, hot dogs, etc. There was not one recipe that I am willing to try. It is possible to eat healthy cheaply without all the processed foods.
