The rich, complex flavor of this monovarietal honey evokes the Tuscan coastal zone where Dr. Pescia's bees forage on expansive fields of heather facing the Mediterranean. The honey offers deep, creamy caramel flavors, notes of heather blossoms expanding on the palate, then a subtly herbaceous finish. Pescia honey has a slightly crystalline structure, making it a natural dessert topping. It is elegant over panacotta or ice cream, or use it to make semifreddo with toasted hazelnuts. It is natural, unfiltered and raw. The square, one-pound jar is attractive and eye-catching, and it's reasonably priced.

| Paolo Pescia (right) with Ron Post of Ritrovo |
Paolo Pescia Honeys Situated on Coastal Tuscany's Etruscan coast, Paolo Pescia is a second-generation artisan honey maker who is intensely passionate about ecosystems and preserving the environment. Paolo practices "nomadic" beekeeping, which requires transporting his beehives to seasonal flowering zones and protected national parks located on the Tuscan coast and hill country to produce single-flower honeys of stunning quality and flavor. All production is done by hand, including the scraping of the honey from their combs. All Pescia honeys are raw and unfiltered and they're extraordinary on bread, pastries and desserts, or in baking, sauces and reductions.

| Ron and Ilyse in Italy |
Ron Post and Ilyse Rathet of Ritrovo For six years, Ritrovo founders Ron Post and Ilyse Rathet lived in Italy, studying, traveling, and researching indigenous foods and wines. Along the way, they met and gradually built relationships with talented, small-scale producers throughout the country. Ilyse and Ron also developed a passion for the products they found. These foods came to "tell a story"-- of centuries-old traditions, the value of diversity, and the implications of supporting small farm production.
It is out of this passion that Ritrovo Italian Regional Foods LLC was created. Years later, the founders continue their passionate search for new producers and products. They bring these discoveries directly to you, "from farm to table."
Upon tasting a Ritrovo import selection you immediately discover high quality and authenticity. Ritrovo's focused, fresh flavors evoke images of special places and preserved culinary traditions. In total, Ritrovo imports over 150 such discoveries from the length and breadth of Italy. The selections featured on Amazon.com are a showcase of the delicious discoveries Ritrovo has made.
The word Ritrovo denotes a reunion or "gathering again" of friends, family, or colleagues. In regional parlances such as Tuscan or northeastern Friulian, a ritrovo is a place where people come to eat, drink, and be merry. Additionally, the verb ritrovare means "to find again" something once lost. These three concepts weave into what Ritrovo is all about: High quality food and relaxed, socially-based dining are fundamental to human life.
