Earl Mandell's Soy Miracle provides basic information about the various benefits of soy, although little depth is provided and the information is not as current as might be good. The recipes are simple and easy to follow; some are excellent while others are just adequate. This is a good starter book: not enough detail for someone with lot's of knowledge, but well worth the modest price.
