This book is well written with clear explanations of the complexities of baking with different ingredients. Probably not the best book for folks with gluten problems as many of the recipes contain some form of wheat, but it's great for those with dairy allergies or lactose intolerance. The recipes work well just as they are written so no experimenting is needed get...

I am a Celiac! My personal opinion is that this book is not for Celiac's. Almost every recipe in this book uses either bread flour or Spelt (a NO-NO for Celiac's).

This book is well written with clear explanations of the complexities of baking with different ingredients. Probably not the best book for folks with gluten problems as many of the recipes contain some form of wheat, but it's great for those with dairy allergies or lactose intolerance. The recipes work well just as they are written so no experimenting is needed get good results or to make the results palatable to the rest of the family. We needed recipes without dairy, eggs, peanuts, soy, corn, and coconut. This book has been ideal for us. It's full of wonderfully easy recipes for everyday foods that everyone in the family likes! (There are also great special occasion recipes!) Good bread machine recipes for special diets are hard to find and should be treasured.

I was eager to receive this book becasue I must avoid ALL gluten and ALL yeast --the book has only three recipes that fit this description --not worth the price if you have to avoid both substances--otherwise it's great--good info on bread machines

I'm allergic to wheat and spelt, but I can tolerate rye and some other grains. Most baking books either have wheat in every recipe (and I mean *every* recipe), or else they are completely gluten free (yech.) Easy Breadmaking for Special Diets contains a wealth of recipes for *everyone*. There are many that contain wheat or spelt; there are also many that are totally gluten free. There are vegan recipes, yeast-free recipes, etc--truly something for everyone. For me, there are some excellent recipes that use 100% rye flour, that have turned out beautifully in my bread machine. I never thought I'd get to eat a good sandwich again but this book has proved me wrong.

My mother is allergic to wheat and so am I, so this book is a godsend to us, as it means we can now eat sandwiches. However I live in Ireland so I found it difficult to get used to "cups" rather than pounds & ounces, but once I learnt one cup is 8 fluid ounces, I discovered it is actually an easier and more accurate measurement of ingredients than using weighing scales. I actully want to advise anybody from Ireland reading this - guar & Xanthan gum (essential for gluten-free bread recipes) is very difficult to purchase in Ireland and I had to purchase from Oregon, USA. The postage cost more than the products, and delivery took 10 weeks....

I bought this book because over the half the recipes were supposed to be wheat free. My son is allergic to wheat, not gluten, and can have oat, rye, and barley. But he is allergic to wheat, and that includes spelt, which IS a form of wheat. (We tried spelt, and he is definitely allergic.) I am very disappointed - Because he has multiple allergies (also eggs and milk), I don't believe there's a single recipe in the book that I can use. Anybody want my copy?

I found that most of the recipes were based on the premise that the person has a breadmaking machine. I don't. You can still use it to make the recipes I suppose but it doesn't give the details of time and temperature. I wouldn't have ordered it if I had known that.

Easy Breadmaking for Special diets is a great recipe book for those who have a breadmaker and are on a wheat- sugar- milk-free diet as I am. I have made several recipes from the book in the last couple of weeks and I am hooked on the corn bread and the spelt bread. I plan on trying the French bread and the pizza dough next.
