About the Author

Karen Kansas Dwyer graduated from the University of Nebraska with a B.S. in home economics and a master's degree in communication. She has taught junior and senior high school home economics for eight years, and has worked as a microwave specialist and instructor for Sharp Microwave Ovens and as a home economist for Litton Microwave Ovens. Currently, she gives microwave presentations for community organizations and television, and teaches public speaking at the University of Nebraska at Omaha. Her other books include Easy Livin' Microwave Cooking and Easy Livin' Microwave Cooking for the Holidays.

I purchased this book for myself and thought it was so useful that I bought another copy for my student workers who had decided this was the semester they were going to be serious about dieting. There is a nice variety of recipes and they are very easy to follow. Especially good for people who have limited cooking facilities and/or limited cooking time. I usually opt to do some of the prep work in the traditional way since I don't think you get the optimum flavor in the microwave. I saute or brown on the stove top, for instance. I like that the nutritional information is clearly stated and this book is especially aware of sodium content - a big problem for some. I was not clear about the browning powder talked about in some recipes. Can't find it anywhere, but the recipes for salt substitutes and dry cream mixture for creamed soups and sauces is excellent and a huge help when time is short. This is a nice addition to your dieting cookbook collection.
