From the Author
Because of my background in both nutrition and cooking, I like teaching my students how to prepare dishes that are healthy and delicious
. When I first started cooking with children over twelve years ago, I wanted to make something other than sugary baked goods with them. I researched other cultures' cuisines for fun recipes that incorporate plenty of plant-based ingredients. Some parents were unsure that their picky eaters would enjoy my classes, but I quickly discovered that kids are much more receptive to new foods if they are involved in the meal preparation.
My students, as young as two years old, would gobble up all kinds of "grown up" foods including brown rice, sautéed mushrooms, tofu, kidney beans, and caramelized onions!
