I LOVE, LOVE, LOVE this book! I started off with Marlene's Sensational Splenda recipes and those were great so I was eagerly awaiting the arrival of this cookbook. It was definitely worth the wait! I have made many recipes so far and everything has turned out wonderfully. I used to never cook; hated to. Her recipes are easy to follow and not complicated, and the ingredients are easy to find. I'm already losing weight within a few weeks of making these recipes. No longer want or crave fast food. This book has changed my way of eating and I feel healthier. It is definitely one of my favorite things I have ever purchased from Amazon!

I do not usually write these but needed to correct the previous reviewer who erroneously stated all the recipes use Splenda or agave nectar. Most recipes in this book do NOT use any sugar substitute. Just look at the cover and you will see - onion rings, Chicken Parmesan, and the Turkey Pesto Panini. Some of my other non-sweetened favorites are chicken curry, hot artichoke dip, and the Best Oven Fried Chicken. The reviewer must not have looked past the dessert chapters to the others (soups, pasta, veggies, entrees, etc.). While I would love to use sugar when cooking, I am hypoglycemic and don't have that luxury; but with this cookbook I can still have wonderful desserts. These recipes are perfect for people like me - they are healthy and simple to prepare, taste AWESOME (my whole family LOVES them), and are appropriate for any type of diet. The nutrition info is really helpful. I am going to buy more copies for gifts.

Right up front, Marlene Koch lays out the purpose of this book (Page 9): "My fabulous news is that eating for pleasure and eating for good health can be one and the same. I am thrilled to tell you that with this book you never again have to be deprived or sacrifice the foods you love for the sake of your health--yes, you really can have it all."

At the outset, Koch looks at some of the key nutritional concepts--calories, fat, salt, carbohydrates, and proteins. In each instance, she lays out the nuances (e.g., good versus not-so-good fats). She writes of diet and diabetes and then enters the realm of "meal planning," including food exchanges, carbohydrate counting, and nutritional analysis. Then, a brief discussion of essential ingredients, ones that (Page 24) ". . .are simply low in sugar, fats, and calories" and assist, easily, developing tasty meals. Among these? Splenda, cottage cheese, cooking/baking sprays, oats, flavorings, and so on.

For any cookbook, though, it's the recipes that are at the heart of matters. This book is divided into numerous categories, starting with hot and cold beverages and ending with creamy desserts. In between? Smoothies and shakes, breakfast entrees, appetizers, salads, pasta, poultry, seafood, and the like.

Just a few examples to illustrate. I use a chicken piccata recipe that works very well. This book features such a recipe as well. Many similarities with what I make, but some interesting differences. Ingredients: boneless chicken breasts, flour, olive oil, white wine, lemon juice, chicken broth (reduced sodium), capers (optional--but I can't stand the thought of optional capers! They add such a nice taste), butter/margarine, and parsley. The steps to make the final dish are straightforward.

The recipes are easy to follow and still have the great taste you expect. Love the cake batter milkshake, I do use other alternitive to sugar products that are more natural but splenda is okay too. I would like to see more recipes that use more natural sugar products such as brown rice sryup. I gave five stars due to easy to follow, taste, and low calories. I hope to see more from the author, this has made weight lose fun for my family and me.

I first purchased this book in November. Since that time I have had to re-purchase the book seven (7) times because each time a friend or family member enjoyed a recipe/meal at my home, they have ended up leaving with my copy. I have purchased three (3) more today. I have health and weight issues and since November I have lost 11 pounds just by changing the way I eat. The food is absolutely delicious and the recipes are what we make, bake, grill and slow-cook everyday. The author has "tweeked" our favorites just enough to lower the calories, fat and carbs without sacrificing one bit of flavor. Further, you really aren't required to buy expensive replacements to add to your pantry, etc. -- it's pay as you go!!! As a former die-hard, frozen meal, fast food and take-out Queen, I can't stress the fun I have had cooking and eating these easy and very full-filling recipes. BUY,BUY,BUY this book and take back your life of unhealthy eating - you really can eat what you love!!!!

I was very excited about this book until I opened it. There are virtually no recipes in the book that do not contain agave nectar or splenda. I did not see this listed anywhere in the description. I personally feel that Splenda and aspartame are the two worst things that you can put into your body so this book is going back immediately. It is a book full of processed, chemicalized foods. If you only care about calorie counts and not your health, this may be a good book for you. If you are interested in eating unprocessed, natural foods that are naturally low in calories, I would look elsewhere.
