Frances Largeman-Roth is a registered dietitian and the former food and nutrition director of Health magazine. Currently she is a contributor to and TV spokesperson for Cooking Light magazine. She is the author of Feed the Belly: The Pregnant Mom’s Healthy Eating Guide and coauthor of the New York Times bestselling The CarbLovers Diet and The CarbLovers Diet Cookbook.

If I could give this amazing cookbook 6, or even more, stars I would. It is visually extraordinarily pleasing and elegant -- yet easy and fun to read. For someone like myself who is not known for her cooking, the recipes are both enticing and remarkably doable. In reading this book I have learned a great deal about nutrition and new (to me!) vegetables, fruits, and whole grains (e.g., farro). I have already tried two of Frances' recipes which have been real successes at (often in the past, drab) family suppers. I have always loved Brussel Sprouts, but have never before enjoyed them as much, and with such flair, as from Frances' recipe for Sauteed sprouts with orange and walnuts.
The beautiful images of the food really bring the recipes to life and make it difficult to resist their lure, as does Frances' friendly prose. I've never been so excited to eat vegetables and whole grains! This book really gives the reader practical and fun ideas for eating a healthier and more colorful diet -- everything looks so good on one's own plate, not just in the book.
"Eating in Color" makes a perfect gift for friends and family. I have already sent off 20 copies and have ordered some more!! My gratitude to Frances Largeman-Roth.

We have plenty of cookbooks, but we use this one all the time! We're particularly pleased with the variety of healthy recipes and the clear directions. The best part for someone counting calories is the nutrition information included with EVERY recipe!! That has been so helpful!! We've tried new things and get more confident with each recipe; in addition to enjoying blueberries now because of the blueberry salsa recipe, we're also chia seed advocates. We not only feel healthier, we love eating food that is so fresh and tasty, and Frances' cheat sheet helped us get started on stocking a healthier pantry. DEFINITELY RECOMMEND!!

I can't decide whether to keep this book on the coffee table or in the kitchen! The pages are easy to read and filled with gorgeous pictures. The concept of the book provides not only great recipes but informative and helpful "ingredient profiles" that tell how to choose, store and prepare each colorful food. I love that she weaves in just enough personal story to make the book friendly, but not overdone. I just got the book and already tried the carmelized red onion and fig pizza recipe-- to die for! Everyone loved it! I'll definitely be sharing and gifting this unique cook book!

This is, quite simply, a beautiful book. As a cookbook, it makes me want to run to the store - and I hate shopping, so that's no small feat. In addition to intriguing recipes nicely laid out, the information about ingredients -- what they are, when they are in season, why they are nutritious, how to choose, store, and use them -- makes this a book to read with pleasure as well as to use in the kitchen.

This cookbook is incredible! I LOVE the colors and the ease of each recipe. Frances did an incredible job and I cannot wait to make every single recipe. I'm buying this book for my entire family because the recipes are so colorful, healthy and incredibly tasty! IT'S a MUST buy; you'll love every recipe and so will your children!!

I received this book as a gift a few weeks ago and plan to give it as a gift in the future! I can picture parents sitting on the couch with their child between them paging through the beautiful photographs in this book and stopping at page 17 "Reds" and naming the red and green produce. Then they turn the page and come to Simply Red Fruit Salad. The dad might say, let's make that! He'd grab a piece of paper and pen and jot down the ingredients and then they could go to the store and pick up the ingredients. At home, the family could pitch in and make the delicious salad together and enjoy naming the different fruits as they eat it. The entire book can be "devoured" in this manner. I will display this beautifully prepared book in my office so my clients can pick it up and enjoy it when we meet to discuss their health promotion efforts.

Frances Largeman-Roth, RD, is a New York Times best selling author and nationally recognized health expert. Frances was the Food and Nutrition Director at Health magazine for nearly eight years. Prior to that, she was part of the editorial team at the Discovery Health Channel, and also held the post of managing editor at FoodFit.com.

Frances earned her undergraduate degree from Cornell University and completed her dietetic internship at Columbia University in New York. She's a frequent guest on national TV shows, including the Today Show, Good Morning America, CBS This Morning and The Dr. Oz Show. Frances is the author of Feed the Belly: The Pregnant Mom's Healthy Eating Guide (Sourcebooks, Inc., 2009), and co-author of the best selling The CarbLovers Diet (Oxmoor House, 2010) and The CarbLovers Diet Cookbook (Oxmoor House, 2014.
