Author Denise Hansen is a registered dietitian with research experience in basic food diets. She has taught college courses in food science, food preparation and preservation, and nutrition. Besides her professional experience, she has over twenty years experience in the kitchen "trenches," growing, storing and cooking basic foods for her family. This unique combination in the author gives the cook the greatest success. She has written each recipe carefully to give you all the details needed for best results, and explains the hows and whys.

More About the Author

Take someone who was raised in the suburbs, give her an advanced education, drop her in the middle of Montana, and see what happens! She learns to love the soil, knows how to make do, knows how to make things "from scratch," and loves to share this passion with others. Denise Hansen grew up on Long Island and then attended Brigham Young University, where she received both a BS and MS in nutrition. Then she and her husband moved to Bigfork, Montana, where she learned a whole new way of life. Ten years later, a move to a remote corner of northeastern Washington State continued her newfound rural lifestyle.

Most of her work as a registered dietitian has been teaching, from children through seniors, concepts of nutrition or hands-on cooking. But most of her time was spent raising a family and producing food at home. As year 2000 approached, people began asking her how to prepare for possible food emergencies, and her first book, Eating Off the Grid - storing and cooking foods without electricity, was published in 1999.

As of 2011, it is being republished as a series of four ebooks, with updated information and many photograph-enhanced instructions, under the series title, Unshackled UnChef. Her latest work, Feeding Your Family in a Fried Economy, is a workbook that takes the reader step by step, gradually releasing you from dependence on supermarket foods and prices, and saving from 30% to 50% or more on grocery bills.

This cookbook is good for anyone serious about implementing a home food storage program, as well as anyone enjoying "old fashioned" or outdoor cooking. When starting home storage, I wondered what I would ever do with all that wheat and powdered milk, which are two of the foundation blocks of most storage programs. This cookbook has some very good, diverse recipes, with the added advantage of being usable in the event of power outages, however this type of cooking is tricky and is best learned before it is a necessity. Furthermore, I like this book because some of the recipes remind me of the types of things my grandmother and mother used to cook (steamed puddings, Boston Brown Bread) and that's also fun for the kids, even though time consuming for me. Some recipes are very simplistic (like PB and What? Sandwich), but the point is to list the nutritional values so that one could figure out a complete diet not lacking in anything just from very basic ingredients.

If you want to live without a fridge, this is the book. Makes living without a fridge easy for anyone. Also cooking with woodstoves covered.
