About the Author

Jessie Price grew up in a family full of great cooks and food fanatics. After graduating from Williams College, she cooked in restaurants in California and Colorado, including the Relais and Chateaux Home Ranch near Steamboat Springs. She started out testing and developing recipes for EatingWell and joined the editorial team full-time in 2004 when she moved from San Francisco. Jessie directs the food content for EatingWell Magazine and has worked on several EatingWell books including EatingWell Comfort Foods Made Healthy, EatingWell Healthy in a Hurry, EatingWell Serves Two, EatingWell 500-Calorie Dinners, The EatingWell Diet, EatingWell for a Healthy Heart, EatingWell on a Budget, The Simple Art of EatingWell and EatingWell One-Pot Meals. I appreciate so much the tips. The cookbook is inspiring and practical. It has good tips for saving money and nice bonus information on canning, freezing, growing greens, making stock, cooking beans... The recipes are very good. All in all it was just what I was looking for and I bought one for my sister as well-- she loves it, too.

Eating Well publishes a number of useful cookbooks but I find I turn to this one more often than the other two I have (Vegetarian and 500 calorie meals). Our household does not always agree on what constitutes a good meal - one person likes very simple meals, another likes more gourmet-style meals, and another prefers mostly vegetarian and it is difficult to find one recipe that pleases us all, yet time and time again the recipes in this book seem to bridge the variety of taste preferences in my household. This book is well worth it, even if you are not on a budget.

I borrowed this cookbook from the library and have not returned it yet. I keep renewing it, because there are so many recipes I am interested in trying, and I love the helpful hints included. I am now returning my borrowed copy and purchasing this book. My favorite recipe so far has been the Tijuana Torta. What a delicious vegetarian sandwich!

The book is colorful and has a lot of nice recipes but my favorite parts of the book are the vegetable roasting charts and a lot of the other items toward the back of the book. I found the recipes to be easy to prepare but some of them seemed lacking in depth of flavor. Still, a good addition to my cookbook collection & I use the book regularly.

very user friendly colorful pictures and organized structure make it easy to use. Quality paper too. Food is getting more expensive lately so I dont know if the recipes are considered being on a budget anymore.
