Product Description

EDEN Organic Barley Malt - U.S.A. organic whole grain barley. Sprouting creates enzymes that convert starch, the complex carbohydrates, to sugars. Evaporation concentrates it to rich syrup. To replace sugar, use cup less liquid for each cup of barley malt syrup used. Use one for one to replace honey and molasses in recipes.

I purchased this to bake with yeast breads. Make no mistake, this barley malt syrup is NOT diastatic, meaning this product will not promote yeast activity in your doughs. This syrup is used mainly for flavor, which has a malty, lightly sweet taste similar to molasses. For baking, this colors your bread slightly brown and gives it a nice, nutty flavor.

First of all, let me say that I only use this to make bagels. However, it does a bang up job and I love the fact that it's organic. Would buy again. Unfortunately, like most sticky cooking/baking ingredients, the screw on lid gets really stuck on unless you clean it after each use or put plastic wrap over the opening before screwing the lid on. So beware it may take Herculean strength after the first use!
