This is the best vinigar sprinkled on steamed cauliflower or any vegetable - great to deglaze a pan - it's extremely salty and slightly sweet - unusual fantastic flavor and i use it all the time. I bought a case when the Japanese nuclear explosion occurred, just in case I couldn't get it again ... Eden is one of the most honest and best companies to buy from.

Eden Ume Plum Vinegar is absolutely one of my favorite condiments. It is a lovely balance of salty, sour and sweet which is pure delight on greens, salads and brown rice. I go through a 10 oz bottle quickly because I use it so often instead of salt. I wish I could purchase it at Amazon but for now I have to search for it at my local health food stores and stock up on it whenever I can find it.

The results of an ALCAT test put me on a very restricted diet. The nutritionist at ALCAT told me I could use this. It makes a very nice salad dressing mixed with hazelnut oil. It beats the heck out of plain oil.

A very flavorful vinegar, though not for everyone, so know what you are getting into. If you have tried the salty, dried plums or the fermented ume plums, then you know what this will taste like. I like to use a dash in my bento box preparations, and definitely in the quick cucumber "pickles" I make before dinner sometimes. I do not use salt if I am going to use this vinegar, and sometimes a dash of sugar will give it a nice balance.

For some reason the grocery stores around here don't stock this (or any plum vinegar), and it's a pain to make a trip to the natural foods store that does carry it. I was so glad to find it on Amazon. This plum vinegar is the key ingredient to a vinaigrette I make that everyone just adores. Hurray (again) to Amazon for having a hard-to-find product at a good price!

I use this stuff to pickle ginger and it's pretty darned expensive, that is,
when you can even find it. I ordered just enough to get the most bang for my
buck, shipping-wise, and man oh man am I happy. The bottles were well-packed and
arrived seemingly overnight. One of my two go-to condiments, the emzu-pickled ginger
is indispensable in my house since the day I fell under its crack-like spell and now
I can go for months without fear of withdrawal. Buy all you can before they wise up, eh?

When my kids were little, I got into making Japanese-style bento lunches. I kept reading about using ume / umeboshi as a filling in rice balls and decided to try them. That first taste was ... awful. But the next day I was craving it so I had another and it was really good but too strong. Then I discovered this which is the leftover vinegar from making umeboshi - a tsp in the middle of a rice ball spreads and is not as shockingly strong as a solid chunk of ume.
Now, I use it all the time in bimbap / kimbap for lunches. Check here for the laver wraps I use:

This is amazing on broccoli, or mixed with oil on salads. I can never understand how a vinegar can impart such a layered flavor to food. It's my version of Tabasco....good on almost everything, including eggs.
