I really like this mung bean thread. I can use it in my soups as well as an angelhair pasta dish with ease. It has nutritive value and the carbs are "good carbs". I like the texture and the ease of cooking mung bean threads. It can be experimented with, like fried in coconut oil for more of a "fried noodle" dish. 2 thumbs up.

I would normally buy mung bean noodles from the local Asian grocery store, but I heard some stories about manufacturers in China trying to cheat the system by using different ingredients (tapioca flour, etc.) as well as toxic ingredients such as aluminum in the processing. We eat a lot of mung bean noodles so I didn't want to give it up in recipes just because of this scare. These noodles are good because I have some peace of mind knowing they're from Japan (hopefully before the nuclear problems) and Eden seems like a reputable company that sources the best ingredients and practices. I'm not sure I'll be ordering more since the price is steep compared to the "China" noodles. It's like 5 times the price. I guess I'll just have to use it sparingly.
