I was quite surprised at how incredibly good this coconut tastes. I will never again purchase what the grocery store sells. It is so good right out of the bag, that I ate more than I should have, I just couldn't resist. I am thinking of buying a coconut cookbook so that I can use this product daily, that's how much I enjoyed it.

I was looking for good organic coconut and this sort of fit the bill. The flakes are LARGE (about 1/2 inch by 1 inch), not really the sort of thing that's easy to use in baking or cooking. I'll have to figure out how to shred it now. It's not sweetened which is a PLUS, but it also wasn't super duper fresh, at least it that's how it tastes. It's A LOT of coconut for the price. I have so much I have to invent new dishes to use it all.

These are great for making macaroon cookies. They bake up nice and crispy. If you want more finely shredded coconut, you can use a food processor to chop them up. I make macaroons regularly as a tasty way of adding healthy coconut to our diet. Since these are organic and unsweetened I use my own sweeteners and other healthy ingredients to make great recipes. Buy in bulk if you plan to use the coconut regularly. Note, these are dehydrated flakes, so macaroons made with this are not the usual kind made with fresh, finely shredded coconut. They are more crispy like a cookie and we love them.

This is one of the best brands of organic, unsweetened coconut flakes I've ever tried. It tastes wonderful. One of the true tests for coconut for me is trying to replicate (without as much fat and sugar) Häagen-Dazs Pineapple Coconut ice cream. For my taste, it does a terrific job.

Here's my recipe using almond milk and stevia, so it is lactose- and sugar-free:

1 cup crushed pineapple, unsweetened, 140 calories
1/4 cup Let's Do Organic unsweetened coconut flakes, 134 calories
2 tsp stevia, zero calories
2 T vanilla (I make my own with Beanilla Tahitian Vanilla Beans), zero calories
4 cups unsweetened almond milk pre-frozen in ice cube trays, 120 calories

I run the coconut through my Vitamix blender to turn it into coconut flour. However, if you don't have a really good blender, or grain grinder, you can just buy Let's Do Organic Coconut Flour.

I add in the pineapple, vanilla and stevia and whip until it contains as much volume as possible.

I then add half of the frozen almond milk and again whip until it has a lot of volume and is smooth. Then I do the same for the rest of the frozen almond milk.

If you are looking for flaked dehydrated coconut, look no further. I can't say that I've tried all the brands out there - mainly because I had all but given up on American coconut flakes, that always tastes like cardboard. Similar Brazilian products tend to be less dry, you bite into a flake and taste the coconut natural oils. Well, this is as close to that as I've ever tasted. The flakes might be dry outside, but are still juicy & flavorful. I eat these as a snack and a treat, straight out of the bag!

This dried coconut is delish! I was first attracted to coconut after learning about the health benefits of its saturated fats, via the Weston A Price Foundation and Mark's Daily Apple. I appreciate that it is unsweetened, and the flakes are big enough to easily grab a few for snacking. Very good value when purchased with the "subscribe and save" option.

I use this product in my recipe for granola which calls for unsweetened, flaked coconut. It is excellent! After toasting in the oven with the other granola ingredients, it adds a great taste to the granola without being overpowering or too sweet. Also, the wide flake holds up in the oven without toasting too much or burning like a finer shred could. I have not tried this product in any baking recipes, but I would not personally substitute this product as a replacement for sweetened, shredded coconut in recipes that called for it.
