This book is as valuable as a history lesson as much as a cook book. As much as WWII affected the Yanks, the Brits were at a whole different level. Seeing the substitutions and tips reminded me of how easy life is here. As for the recipes, most are interesting, but few are inspiring. I very much enjoy reading this book, but I read it more like a novel than as an instruction book.

This is a good cookbook if one is looking for traditional, old style French cooking. However, there are no photos which makes it difficult to know whether or not you are getting the correct end result. Would not recommend it unless you are intent on learning authentic French country cuisine - from the ground up. Lots of work for modern chefs.
