1.0 out of 5 stars Surprised Emeril fan-very poor product
I purchased the 10 pc set. I am so surprised the Emeril would allow his name on this cookware. It is so poorly balanced, bottom heavy it takes two hands to pour from even the smaller pans. The glass lids with the steel band are very hard to clean. On two of my pans the bottom copper and aluminum layers separated rendering them useless not to mention dangerous. I...

This is a nice set for the money considering that it is made by All-Clad and carries their lifetime guarantee. However, it is not the same construction as an original All-Clad pot or pan.

Original All-Clad is triple ply throughout (sides & bottom), constructed with aluminum "clad" by stainless steel inside and out. That construction distributes the weight of the pan evenly and you can feel the balance when you move the pan around as you toss your food around when you cook/saute.

On the Emerilware, the bottom of the pan is the only area you will find this type of construction, thus making it bottom heavy. And because the pan is bottom heavy, you don't have all the finesse of tossing food around as easily.

The sides are a thin, single stainless steel layer and and will have the tendency to bend easily if you aren't careful. The pans appear to heat evenly and do a decent job cooking overall.

Remember to use lower heat settings if this is your first time using quality cookware. Also, the lid handles become unusually hot when cooking, so use a pot holder or dish towel to remove them.

5.0 out of 5 stars Best kitchen buy I ever made, September 15, 2003

People may have complaints about where it's made (where is ANYTHING made anymore) or not being fully All Clad in its construction, but look at the price! I've got the 10 piece set; my daughter, after helping me cook with it, asked for (and got) a set for Christmas; I know of three dinner guests who after watching the cooking and cleanup, have gotten the set. When you're cooking the bottoms get really hot, really fast, so if you're not used to good cookware you can be surprised. It conducts heat so well I notice changes in how long it takes me to make things that I make often.

I still can't get used to the handles not getting hot. But they don't get hot. The lid handles don't get too hot for my bare hands, either, even when cooking sauces for hours - and I am the biggest wimp about hot handles.

They clean up great - I've done blackened everything, and never had to use more than a nylon dish brush on a pan to clean it. Have also done panfried steaks where the pan bottom is black and crusted and then you make sauce in it, and the sauce cleaned out the pan bottom. The heat is even - when doing blackened stuff, it blackens evenly everywhere. If you've lived with non-stick cookware, you need to learn to use a little oil when cooking with this stuff. Hey, olive oil is good for you!

Frankly, I'd have bought it sooner if it didn't have Emeril's name on it, because it's an exceptional deal and I hate the whole celebrity endorsement thing. But this is really good stuff. I don't mind having his name in the kitchen with me if I can use cookware this good at this price.

Now if his knives would only be the same quality...

4.0 out of 5 stars Great cookware....great value., November 28, 2004
This review is from: Emerilware Stainless 10-Piece Cookware Set (Kitchen)
I've been researching ad nauseum on the internet all about what type of cookware was the most recommended, and decided that I either wanted Mauviel or All Clad. I did the smart thing, and went to Williams-Sonoma to take a look at the cookware in question before I made the investment. As beautiful as the Mauviel was, it was just entirely too heavy. I checked out the All Clad, and those pieces were somewhat lighter, but the 10" fry pan was unwieldy, and I didn't like the angle the handles were placed at. The saleslady told me that the All Clad Copper Core cookware I really was desirous of was even a little bit heavier!

One reason why I picked the Emerilware was because it has a lifetime guarantee like the regular All Clad does, and the 7-pc. set was only $149.00. The other good selling point was the glass lids. Some people like them, and some don't.....I happen to like glass lids much better, and they were constructed every bit as well as the Calphalon Tri-Ply lids I compared them to. I also like the indentation in the handles that allow you to place your thumb in the right spot for a good grip.

The All Clad stainless steel sets just have a blunt, unrolled edge. The Emerilware has a nice rolled edge that is perfect for pouring. On my electric coil stove, they heat up very quickly and evenly, so no complaints there.

I give this cookware 4 starts only because I wish that the largest lid in the set did a bit better job of fitting the large frypan. Other than that, I'm glad that I didn't blow $500-$800 or more on cookware that was too heavy to enjoy using.

5.0 out of 5 stars A lot of "Bam" for you buck..., September 4, 2002

I just purchased this cookware and I love it. It has great heat distribution and I also love the glass lids. The only drawbacks I noticed are as follows. The lid handles get VERY hot and the stainless steel lips on the lids bend rather easily. The reason I am giving it 5 stars is that even with the slight shortcomings you can't beat the price.

5.0 out of 5 stars Cooking Mom, November 16, 2003

This review is from: Emerilware Stainless 10-Piece Cookware Set (Kitchen)
I just bought these pans yesterday because I watched 20/20 the other night and was horrified at how bad Teflon pans are for your health!!! I had ALL Teflon pans and now they're trash. I LOVE the price for how much you get, love the Emeril name and love the All-Clad name. I'm impressed with their weight. One person noted that the weight isn't even, but it's something you get used to and adjust your ways. I just cooked bacon and eggs in the two frying pans. Nothing stuck to the pans. Of course the bacon pan was quite dirty, but after I let it cool off, I soaked it for only a few minutes and it came clean w/ my nylon scrub brush and I didn't have to put any elbow grease into it at all. I know some people gave it a lesser review because it's a slightly cheaper construction than the original All-Clad, but I personally am very happy that they made a 'slightly' cheaper set of pots and pans for those of us who can't afford the real deal. They're still a great set of pots and pans and much better than most of the other brands.

5.0 out of 5 stars Great set of pans, August 3, 2004

This review is from: Emerilware Stainless 10-Piece Cookware Set (Kitchen)
I've been cooking since I was 5 and have used everything from my grandmother's cast iron to a $5 paper-thin aluminum pan, and I must say these are some of the best I've used. Sure they're not All-Clad, but for the price they make a great set for an enthusiastic cook with a limited budget. If properly preheated and oiled nothing sticks, and if you should overdo it with the heat a little stainless steel polish does the trick. They make a wonderful addition to a nice set of cast iron skillets (properly cared for cast iron is still superior for some things in my book).

In regards to the reports of the melted pots: As a materials scientist I have a bit of experience in melting metals with fire :) It IS possible to melt some metals with a natural gas stove as the flame temperature is ~3000F. That's not to say your pan will ever reach this temperature (or anything close) under normal operation, as that depends how much fire you're using and what's in the pan (ie water). Under normal operation it takes a few minutes for water to even begin boiling on a gas stove, even the small amount used for steaming broccoli, so I find it very difficult to believe this pan boiled dry in 1.5 minutes unless there was only a few millimeters of water in the pan and the stove was on the maximum setting. That said, judging from the scorching on the the unmelted portions of the pan, I'd say the pan had been subjected to intense heat for a prolonged period of time... the sort that would require the maximum setting from a large burner (or a defective burner) acting on a dry pan. The only way this pan could have melted in the way that it did is through gross negligence or a deliberate act. There's a reason you're not supposed to let pans boil dry.

Recently bought a Viking Ceramic Cooktop and decided to replace the cookware. Viking Cookware (rebranded All Clad) was too damn expensive, and regular AllClad was just not worth the extra money over the Emerilware. This stuff is a bargain. Feels, and cooks, like twice the money. Buy it. You won't be sorry.

This review is from: Emerilware Stainless 10-Piece Cookware Set (Kitchen)
I purchased the Emerilware 10-piece stainless steel cookware set, and have been thoroughly enjoying it ever since! It heats food evenly, and has a good weight to it, though it's not too heavy to move around easily. After years of using a nonstick cookware set, I wonder why I didn't try stainless steel sooner! It's nice to actually be able to brown food. The pieces clean up easily. While it's alright to use steel wool on the brushed steel inside to clean off more stubborn food, don't use steel wool on the outside, as it may scratch the shiny, smooth outside finish or damage the copper band, which, by the way, adds an elegance to the look of the set that makes it suitable for hanging on display from a ceiling rack, for instance.

I have found that the set includes all the pieces I would use on a routine basis, and many other pieces may be purchased separately for more specialized cooking needs. Definitely a good set to have if you want All-Clad's high manufacturing quality without paying the outrageous prices that All-Clad asks for it's name-branded sets.

4.0 out of 5 stars Wonderful pans - once I learned how to use, October 9, 2004

I bought my set about a year ago. They're so pretty that we also bought a pot rack to display above the island in our kitchen. When I first cooked with them, the bottom stained blue. Then when my husband fried some potatoes, the oil burned and made the pans look really grungy.

Then after I read the directions (that's the key people) and learned that you put salt in the boiling water after it boils, heat the oil with the pan (and always use oil since it's non-stick), use lower temps, etc. I really got good use out of them. Got the grungy oil off the fry pan, cleaned them up again, and stopped washing them in the dishwasher (even though it says you can) and they're exactly what I expected. Great pans from a great label.

This set replaced an anodized Calphalon set I had for about 5 years. Now those, I didn't like. I really love the stainless steel and imagine I will use this for much longer. I'm planning on getting a few more pieces to add and possibly a couple All-Clad. Love the warranty!!

Like another reviewer said, you have to know how to cook to get good use out of these pans and enjoy them the way they're intended. They're not cheapo, turn the heat on high, teflon coated, crap you can buy in the grocery store. And sorry, I have to say it, to the reviewer that is "suing" - get a life!Geesh...

I don't normally purchase items that are endorced by celebrities. They are usually lower in quality in order to keep the price down. However, this cookware set is a quality product. Good weight, flat cooking surface and heats evenly. I like the glass lids, although I understand they are cheaper to manufacture. For the price you can't beat the quality and the All-Clad name. I researched other brands and I would recomend this product. By the way, a tip from my lovely wife, insert the corks from your wine bottles or champagne (for the larger ones) into the handles of the glass lids. It makes them easier (cooler) to work with.
