Clay, a natural and noble material, has been used since the mists of the time to cook or preserve food. While respecting the traditional techniques, Emile Henry has introduced technological improvements (Ceradon ®) so that the dishes are more resistant to mechanical and thermal shock. My rating is mostly for the time it took to end up with one good piece. The pieces themselves rate 5 stars.
I own many pieces of Emile Henry and love the beauty, sturdiness, and versatility. I had wanted to own several sizes in this style in the figue color. The first one of the 8.5" oval gratin had a dip in the side of the piece- evidently bumped while the clay was soft. The second one had a scratch across one of the handles that looked like it had been scraped by a bumpy surface during the glazing process. I gave up and canceled the order.
I ordered the 3.5 qt. size in figue and the first one came (from cooking.com) with a flaw in the glaze on the exterior, something I might have tolerated if I was buying seconds. The second one arrived in good shape.
I hope this isn't a sign of things to come with Emile Henry. Even if there are flawed pieces, it seems that the shipping departments were asleep on the job.
I may try later to pick up more pieces- and I do love the one I ended up with, but am not willing to take the time after the recent hassles.
