I bought 2 sets of these to use for making chicken pot pies. They are the size as described in the listing for them on Amazon, but I should have reached for a ruler before ordering to have gained a visual appreciation for their small size. They are exactly as advertised, so I only blame my wife for saying the ones I wanted to buy were "just too big". Well, these came and she said they were "just too small". I'm still searching for the ones that are "just right". So if mini is your thing for pies and such, get these, they're high quality dishes, even if a bit pricey. But if you're inclined to think "I wonder what everyone else is going to eat after I finish off all 4 of these" , then get larger ones.

I love the capability that can be transferred from a microwave to an oven. I use it primarily for my frozen crab cake that I microwave it first for couple minutes, then move it to an oven to finish cooking with crisp textures.

These are the perfect size for our individual chicken pot pies, cherry cobblers, rhubard crisps, etc. Bakes evenly, crisp/not soggy bottom crusts, and they're easy to care for. Very pleased to recommend these beautiful pie dishes!

If you have never baked a pie in Emile Henry pie dishes, you don't know what you are missing. The advertised properties of the special clay found only in a certain region in France are everything purported. You really can take them from the freezer to the hot oven. I don't make pies very often, but when I do I like to make an extra one to go in to the freezer. And since we have only my husband and me at home now, a whole pie is usually too much for us to eat within a couple of days. These 5" pie dishes are perfect. One of these pies will serve both of us. We also like them for individual pot pies. And I take them directly from the freezer to the 425F degree oven. Also, with the Emile Henry, the bottoms not only cook, but they are a little crispy - mmmm.

Factory Seconds?,

Emile Henry makes great products, however they must be shipping Amazon their seconds. Out of a total of eight 5" pie dishes I've received so far, only two have been without defects in the glaze. I'm just trying to get a set of 4 together and it's a colossal hassle.
UPDATE MAY 2010: ---- After this experience I was a bit shell-shocked, however I did recently re-order some dishware. The quality was much improved. There are still the normal slight imperfections from creating a stoneware dish but this type actually adds to the appeal of the dish. Out of eight items, I did not send any back. No holes in the glaze or baked-on crumbs. I notice the Emile Henry items are no longer "4 for 3" so perhaps that has something to do with it. The dishes themselves are 5 star, Amazon's service is too, I'm glad things are better, but beware- if purchasing for a gift, do it ahead of time to ensure a good quality dish in case you need a replacement. Raised review up to 4 stars based on most recent purchase. Great dishes, great service, and it beats the 5 hr drive to NYC... ----- END OF UPDATE. Holes in the glaze, debris baked onto interior of dish, these have been the worst Emile Henry products I've ever bought as far as quality. Amazon should labels them as seconds or start inspecting the dishes before sending them out. Great dishes but I'll start purchasing in stores to save the hassle of returning them two or three times. P.S. Update... Amazon has been very good about sending replacements, this is my first time ordering stoneware online and I don't think I'll do it again; it's an item that is just too variable to purchase unseen. Unfortunately there is no Emile Henry store near me, but I suppose I do get to NY occasionally. It's not obvious why there is a problem- the boxes are sealed from the factory, so it's not Amazon's fault unless they know they have defects and aren't labeling them as such. Which would be weird, b/c they usually want happy customers... alternatively Emile Henry is shipping online retailers their seconds in the hopes of fobbing them off. I know if I owned a kitchenware store I'd send these back before they even hit the shelves and the customer would never see the bad ones. Regardless.... where's the famous Emile Henry quality? Great dishes if you get a good one. The other items I've ordered have been okay, perhaps it's just these 5" pie dishes? Amazon's customer service gets this product two stars, otherwise, as I said, two out of eight have been good. |
