Ideal for baking individual soufflés, these two 12-ounce dishes are a traditional French shape with ribbed exteriors. They can go directly from freezer to oven, into the microwave, under the broiler, and through the dishwasher without harming their glossy, lead-free glaze, which does not absorb odors or moisture and is so hard it will not crack, craze, discolor, or scratch--even if food is cut directly on it. They measure 4 inches in diameter and 2 inches high.
Since 1850, Emile Henry cookware and bakeware have been made in Burgundy, where a unique clay is kiln-fired into a ceramic unsurpassed for conducting and retaining heat. Prized worldwide, Emile Henry products come in a wide range of colors, from the earth tones (with creamy interiors) of the rustic Le Potier line to the bright hues (with white interiors) of the Couleurs line, of which these all-white dishes are gleaming examples. Each piece is stamped with the year it was made and the initials of the craftsman responsible for its perfection and carries a one-year warranty against defects. --Fred Brack
