Since I have become a "Toaster Oven Gourmet," I have been seeking smaller casserole and baking dishes for baking and serving. These are just perfect. Heavy and well-made, white to match all my dishes and excellent heat conductors make these an excellent choice for toaster oven baking. I use them at least twice a week for lasagna, pot-pies, shepherd's pie, as well as plain roasting of poultry and vegetables. I have also made fruit pies, albeit not the classic round shape. They cook evenly and are very easy to clean. Great size for the freezer, too. Recommend highly.

These little baking pans are wonderful! One is the perfect size for a Jiffy type cornbread. Since I usually prepare dinner for just the two of us, I can often use the baking dishes to prepare and serve individual portions of many dishes. Even my husband commented on how nice they are and they clean up so easily.

I have four of these individual bakers (and could use more) and love them for freezing smaller portions, e.g. for Once-A-Month-Cooking. I like to make a big batch of something (pasta or rice casserole, enchiladas, lasagna), portion some into a larger dish for dinner that day/leftovers and portion some into these individual baker for freezing. I find these "individual" bakers to hold a fairly generous portion, enough for two reasonably-sized main portions, if supplemented with a salad or vegetable side dish. These bakers would also be great for a fruit crisp or cobbler, either for baking today or freezing for later. I have collected a lot of Emile Henry bakeware over the last few years since I have been very impressed with the performance. The Emile Henry clay/ceramic heats evenly in the oven and all food (main dishes, veggies, desserts) just seems to cook better and taste better compared to my other glass or metal pans. The finish is durable, with no worries about scratching when cutting with a knife and cleans up easily. They are fairly heavy.
