Product Description

Color: Rouge

Emile Henry Flame-Top ceramic cookware is light and versatile, an innovative breakthrough in ceramics technology. Our new line of Burgundy Clay Flame-Top ceramics products work directly on a gas flame or an electric or halogen hob without a diffuser, without any fear of cracking or breaking. Much lighter, (30% lighter), than many types of comparable metal cookware products, Flame-Top is microwave and dishwasher-safe, cleans up very easily, is extremely strong and durable, goes under the broiler, and can go directly from a freezer or a refrigerator to a hot oven to the table, where it will retain the cooking heat for a very long time. Unlike most metal cookware products, Flame-Top cookware can sit on a very hot open flame for an extended period of time without any ingredients in the cook pot, and they will not crack, discolor or break. Perfect for braising, browning and slow cooking due to the incredibly gentle heat distribution properties of Burgundy Clay, Flame-Top products cook evenly and thoroughly when used on top of the stove, in the oven or even in the microwave. Enhancing this gentle cooking action are raised dots on the underneath side of each lid that evenly distribute evaporated juices directly back into the cooking food. This self-basting technique produces a more thoroughly cooked, tender and moist dish than with traditional lids, which force liquids to run down the sides of the pot, and which contribute to even cooking. Emile Henry Flame-Top ceramic cookware is light and versatile, and better brings out the flavors of all cooked foods.

After using a silicone tagine and accidentally breaking a traditional tagine (cracked during use), I love this tagine. It is nice not having to prep and then nurse a traditional style for fear of it breaking. We've had it for about 2 weeks and have used it 5+ times. It heats and cooks beautifully on our stovetop, washes easy, and is very durable. The price is high, but the tagine is definitely worth it.

Many reviews on tagine cooking sites said this is the tagine to buy....and they were right. I put this up there with my All-Clad French Oven Roaster. Timeless quality, will pass on to my kids, looks beautiful and cooks food on a different level. I would absolutely suggest to buy the 3.7 qt. It's not too big and you will always want leftovers (if you have any). You also need the space to brown the meat without overcrowding. It browns food very nicely and cooks it quickly and evenly and tender. Only problem is storage-I leave it on my cooktop, but the outside gets dirty. Top, top quality product with beautiful design and excellent function. Worth the expensive price-I picked it as a Christmas present from my In-laws.

I bought this for my 22-year old daughter for Christmas because she loves to cook recipes from this part of the world. Fortunately, she is living with us at the moment, so I can enjoy tagine cooking as well! Food preparation is easy -- much as for a crock pot -- but the results are ready to eat in a short time. Food does stick to the bottom in the shape of the flame on our gas stove, but soaking makes it very easy to remove. I'm glad I selected the larger size, even though it made it that much more expensive, because it holds so much more. It would be a shame not to share food this good with friends. There were a couple of minor flaws in the finish of the one I originally purchased, but Amazon exchanged it with no problem, and the replacement was fine.

The basic approach of this cooking method may related to access to water resources in desert environ. However, the stew like features are attractive and food texture works. Of particular attractiveness are the flavors associated with the Moroccan and other North African recipes. Great stuff. I thought the size might be a bit large but my wife's insistence on this larger size won out. She was right. Works for family of three and for larger dinner party. Not a huge capacity -- just right for family, in my opinion. Quality of items is good. Packed and shipped well. No damage at all. And, opened the doors to new cuisine for us.

I ordered this to cook a Sephardic-style seder. Never got such rave reviews! Several of my guests bought this model tagine after that and we shlep them from one house to another so that we can cook meals together. This is an extremely easy way to cook fragrant and flavorful meals, and not necessarily Moroccan. It can make all kinds of stews, beans, braises, soups, meat, fish, vegetables, sauces... What's great about this one: It's huge! (Traditional materials don't generally lend themselves to this size.) It can feed 10 people easily, fits well on a large stovetop burner, goes from stove to table (authentic ones don't necessarily do that either). Worth every penny and will last longer if you follow the directions carefully, use very low heat and plenty of liquid.

It came in record time, and in perfect shape! It is better than we thought it would be. Love it!!!!!!!!!!!! We love how the steam from the cooking food rolls down the inside of the lid. Very delicious food comes out of that!!! Well worth the cost. It looks beautiful on the counter when we are cooking with it.

I first bought the smaller 2.6 Quart tagine in Azur. I loved it so much that I bought the larger Tagine 3.7 Quart in black! The black is more of a semi-gloss. Knives and stainless steel scrubbies don't scratch them at all! This larger Tagine can really hold a good amount for friends and family. I'd never known I needed a Tagine, but now I would not want to cook without this versatile pot! Emile Henry Flame Top Tagine is just wonderful! For one, what a surprise to be cooking with a clay pot on a stovetop! It feels strong, yet light. As directed, I seasoned it with milk, which was a bit of a surprise in itself! Cover the bottom of the Tagine with milk, bring to a boil, turn the stove off, cool, then clean. I am intrigued! What actually just happened?! I am already feeling the wondrous adventure to be had with my new Tagine, and Moroccan Food! You can saute, steam, simmer, bake, and broil in this pan!
A new Moroccan friend is teaching me some of the wonderful flavors, spices, and meltingly delicious foods of her country. The first Tagine we made was a traditional fish tagine, layered with onion, red ripe peppers, fresh tomato, potato, and lemon slices, halibut, and haddock, lots of paprika, cilantro, some parsley and spices. This recipe is composed, and not stirred, but we kept the gas flame a bit too high and ended up with some burn on the bottom. First time with a new pan, new recipe, new stove. WIth an overnight soak, and a quick scraping with a spatula, it was like new! It is dishwasher safe as well.We have already created six amazing Tagines in the Tagine! Tagine is the name for stews of sorts, created in this elegant clay pot, also called Tagine. It is usually scooped up with pieces of Moroccan bread, though we used pita bread which is similar enough.
