A necessity for every vegan who likes to bake or cook, this potato and tapioca starch based powder acts as a leavening and binding agent to replace eggs in recipes. Gluten-free specified on package. 16 oz. box contains the equivalent of 100 eggs! Kosher.
Ingredients: potato starch, tapioca flour, leavening (calcium lactate [from vegan sources], calcium carbonate, citric acid), carbohydrate gum.

I have used this in every baked good that I have made - from cookies to pancakes, it works really well. I've gone through several boxes over the past few years and will continue to use this. It's cheap, easy to use, and works well.

This works great if you need fewer than 2-3 eggs. The real secret to getting it to work really well seems to be beating it with a whisk until it's almost stiff like egg whites. That helps it to fluff and work. Do not try to just dump it in with a mix. I fold in the egg replacer much like I would egg whites near the end of whatever I'm mixing. It works great then--great for pancakes, cakes, and other similar baking things. I've also used it in casseroles that call for eggs.

For those on a restricted diet or concerned about what you are ingesting, be aware that egg replacer contains both corn-derived ingredients as well as Carboxymethylcellulose, a chemical thickener that is indigestible and can cause diarrhea, constipation and bloating. Those concerned about your intake of random chemical compounds should reconsider this particular thickener/rising agent in your baking and cooking.

Not at this price!
This product works well in most scratch recipes, but does not work well in every boxed mix -- brownie mixes in particular just turn to goo. Read more

No Good
My sister tried this product and it did not work on her cake. After frosting her cake, it strated breaking from the middle. This product really doesn't work for Egg Replacer
