This is much more than a good cookbook -- it's a sort of Proustian evocation of a bygone era. Far better than most exercises in nostalgia, this tells you exactly how to relive that delicious past, even if you happened to miss living it in the first place: the recipes are great, easy to follow, and they make this average cook feel, however briefly, like a distinguished chef. The photographs are gorgeous, the food looks so good it's hard not to put on a suit and tie and a flower in your lapel before sitting down to eat these feasts. Even if you hate to cook, this is a book you'll want to have on your coffee table, ready to browse and dream of a more elegant, well-lived life.

This is not just another cookbook. It is a wonderful book to read, cook with, and indulge, beautifully photographed and very well researched and edited. The stories about these classic recipes reveal the history of great entrees and the people who enjoyed them. The recipes are well explained and easy to follow. Some are cleverly simple, i.e. Paillard of Tuna.
