This knife-and-cutting-board set makes a perfect gift for the home cooking enthusiast or college graduate setting up a new kitchen. The seven-inch santoku, an Asian-style cook's knife, is from Wüsthof's moderately priced Gourmet series. The blade is precision stamped from a sheet of high-carbon, no-stain steel and finished to a razor-sharp, hollow edge for clean, thin slicing of vegetables, fish, and meat. Though the full-tang, triple-rivet polymer handle is dishwasher-safe, the knife is best cared for when washed by hand.
Designed by Epicurean Cutting Surfaces, the 15-by-11-inch board, with a hole in one corner for hanging, is made of compressed, natural wood fibers from sustainable harvested trees, and is dishwasher-safe as well as heat-resistant up to 350 degrees F. That means the board can double as a trivet for hot pots and not show scorch rings. The board will not dull knives, never needs oiling, and resists bacteria growth.
