Amazon.com

Epicurean cutting surfaces not only add a sleek look to contemporary kitchens but perform with commercial-grade sturdiness. This 18-by-13-inch board in a natural brown finish is from the Gourmet series, one of three lines produced by Epicurean. The middle line in terms of thickness, Gourmet cutting boards measure 3/8-inch thick. This particular model is formed with a slate-colored (black) core that shows through at the juice groove cut around the perimeter. While the ends of the board are perfectly straight, the longer edges curve slightly. A hole in the corner allows hanging.

Epicurean makes its products in the USA of Richlite, a natural compressed wood-fiber laminate made from sustainable harvested trees. Many countertops now in contemporary kitchens are made from Richlite. The multi-functional surface won't dull knives; is heat-resistant to 350 degrees F, which means hot pans can be place on it without leaving a brown ring; requires no oiling; and is dishwasher-safe and approved by the National Safety Foundation (NSF). Both the top and bottom surfaces may be used for cutting meat, chopping onions, slicing bread, and more-the natural finish will darken with use. The Epicurean cutting surface makes a great gift for the home chef. --Ann Bieri

Made of many layers of FSC certified paper pressed together with a food safe resin, all Epicurean products will last for years of daily kitchen use. All products are made in the USA and designed with a focus on function but also with a concern for environmental stewardship. Skateboards

From Skate Parks to Cutting Boards

What do skateboarders and foodies have in common? They're both cutting it up on the same durable material. In 2003 Epicurean was founded by custom skate park manufacturer TrueRide as a way to repurpose excess skating surface material used by the company. The founders of TrueRide knew of the history of the surface material in commercial kitchens, so creating a line of home food prep surfaces from scrap was as natural as, well, skating on it. TrueRide skate parks last for years outdoors with extensive abuse from both weather and skaters, so you can be sure your Epicurean Cutting Surface can handle even the hardest working kitchen.

Epicurean Wood Fiber Materials

Epicurean cutting surfaces are fabricated by using materials that gain their natural look and texture from the organic contents that comprise them. Each color is composed of a set of fiber sources layered together and pressed along with a food safe resin to form a sheet that has unequaled food preparation properties. Each color of Epicurean cutting surfaces has slightly different features based on the blend of its sources, though all of them share the fact that they are a wood fiber kitchen tool that is dishwasher safe.

Comparison

Use and Care

All Epicurean cutting surfaces offer a durable design that can stand up to the rigorous daily use of any busy kitchen. They all resist staining and offer maintenance-free convenience--no need to oil or bleach. Though stain-resistant, the cutting surface may stain if left in contact with a highly alkaline product or food for a prolonged amount of time. Liver, papaya, and red beets, for example, may leave a mark. To remove stubborn stains, try a non-abrasive household cleaner. All cutting surfaces can be cleaned in the dishwasher, or by hand in the sink with hot soapy water.

I have been looking for a good chopping board for ages and this one is the best I've used so far. The wooden ones need good caring and I simply don't have the time to oil them so they've gone dry. I've also used a bamboo one but it cracked after a while and for me it's a bit too heavy to lift and wash. I enjoy the Epicurean cutting board immensely - it's light, easy to carry around and wash, leaves only very light cutting marks and protects my Zwilling knives. Also it doesn't need oiling so it always looks fab!

The board is very light for its size and appears to be quite durable. And it's easy to clean.

But it has a very hard feel--more like cutting on glass or granite than on a traditional wood or plastic board. If you do any chopping, it sounds like machine gun fire. And if you do slicing/rocking with a curved chef's knife, it's still has a pretty harsh feel. I still haven't used it long enough to judge whether it really doesn't dull knives any faster than wood--but I have doubts, given how it feels.

Also, out of the box it had a horrible smell--like a wet dog wearing a wet wool sweater. But after a run through the dishwasher, it went away. Not sure if it will ever reappear (tho I note that Cook's Illustrated described the device as having a bad, lasting odor).

This is an excellent cutting board. It's nice to have a large board with a juice groove that is dishwasher safe. I prefer wood for cutting non-bacterial stuff like produce, but this is perfect for things like poultry. I also used it to carve a rotisserre chicken, and was quite pleased. The one minor flaw is that I have a granite countertop, and unless I place a towel underneath it slides a little if I'm doing some serious chopping. But as it's meant to be usable on two sides, I don't mind very much.

I've had this slate w/ black juice groove board in the 13 x 18 size for 2 years now. It is our only cutting board and we use it for cutting meat, veggies, and bread. Really, it had only the faintest of cutting marks on it up until a month or so ago. It was at that time a month ago that I started using a heavy meat cleaver to hack through turkey necks for our dogs' raw diet. Yes, it's showing considerable marks from hacking apart over 50 pounds of turkey necks with that meat cleaver, as you might have guessed.

It has no stains on it, though I suppose we don't really cut anything on it that would stain it, but I thought it worth mentioning that it hasn't discolored at all. It is a bit of a hassle to store it in our cupboards so we leave it out all the time, propped up on our counter. When we first got it I washed it a few times in the dishwasher but it does take up quite a bit of space so now we just give it a quick wash in the sink, easy breezy.

It still is a handsome cutting board even with those meat cleaver hacks and we'll continue to use it.

**UPDATE** Well, when I used the meat cleaver to cut apart 50 lbs of turkey necks with this cutting board, it survived. The same can't be said when my husband helped me out by hacking apart 30 lbs of turkey necks for our dogs' raw diet... he can swing the cleaver a lot harder than I can to cut through a turkey neck in one swing. The cutting board has met its end, the top layer has been chopped and marked up enough that it has peeled up, revealing a composite-type material underneath the pretty exterior. We'll continue to use this cutting board for raw turkey necks but we had to get a new cutting board for other tasks. So, to make a long story short, don't bring a meat cleaver down hard repeatedly upon this Epicurean cutting board. Yes, we should have known better. :)

This Epicurean has a smooth surface (unlike cheap plastic cutting boards), is dishwasher safe, very sturdy, looks great, and makes you feel like a $@#&ing stud in the kitchen

We ordered two of these a few weeks ago, because we were tired of buying less expensive cutting boards and having them warp almost immediately (we took good care of them - drying them immediately after washing, standing up to dry, but they'd still warp and separate). So far, we have had no problems with these whatsoever. No warping, they dry almost immediately after washing, and they don't nick and scratch as easily as wood cutting boards.

They are very smooth, so you might need to put some kind of mat underneath them to keep them from moving around if you're kneading dough or something, but other than that it hasn't been an issue. Highly recommend, well worth the price!

We bought this for my brother after we received the same board for our wedding. It is a great cutting board. The edge catches juices and the board is very easy to clean.

I have several epicurean cutting boards, including this one with the groove. My "go to" ones are this same size and have the little silicone grippers on the corners. The best things about these boards are that they are lightweight, easy to clean, and store. I do not put them in the dishwasher-it seems to me that it would dry them out-so I wash by hand.
I do find they have a weird smell the first time you get them wet. I have solved that problem by making a thick paste of baking soda and water and letting it sit on the board for about 15 minutes when I first buy the board. I wash the paste off, and it's good to go-the stink is faded and hardly noticable. Totally gone within a couple uses.
I've also realized that you can make these look like new by spreading a little board mineral oil on them. Perfect.
Hope that helps!
