The Crimson Series 8-inch Carving or Slicing knife features an angled tip for increased strength and a precision ground and polished blade for thin smooth cuts. The carving knife is used to slice thin cuts of meat like roasts, ham, poultry and other large cooked cuts. The carving knife's blade is much thinner than a chef's knife allowing for more thinner, more precise slices. The Ergo Chef handle is custom crafted from G10 fiberglass composite material for superior durability that surpasses all other plastic composites. Blades are made from a single piece of high-carbon, German stainless steel (X50CrMoV15) and have a polished finish for stain resistance. Blade edge is ground to a razor-sharp 16-degrees. Hand wash with warm soapy water and dry immediately.

I am now looking forward to being in my kitchen!
In pursuit of the perfect knife, I came across Ergo Chef, a company in Connecticut with an interesting story, which produces high quality knives with ergonomic handles and blades and a price I could live with remorselessly.
I got the handsome new CRIMSON G10 6" Santoku Knife; a beauty that stands out among the other knives on my magnetic knife rack when I’m not finding every pretext to use it in food prep.
As we know, in the cutting process, your hand, wrist and grip are essential; and the ergonomically designed Crimson Series with a special handle and a precision engineered blade definitely meets the need of professional chefs and home cooks to work with less strain and fatigue on their hand, wrist, and forearm and to chop, slice and dice with guiltless pleasure.
The handle, crafted from G10 – they say it’s the world’s strongest fiberglass resin handle material – has that gorgeous wood grain look and solidly clasps the blade’s back or spine which plunges all the way into the handle. It offers a comfortable grip, increases control and eliminates friction.
The wide blade is made from high performance German steel which is heat treated, ground, honed & polished to perfection for a razor sharp 16-18 degree cutting edge to allow for smooth moves, less force and more control when the knife comes in contact with the food. The blade’s Japanese- style Santoku with hollow scalloped ribs along the edge keeps foods (like potatoes) from sticking to the knife.
The ERGO CHEF CRIMSON G10 6" Santoku Knife is adapted to most cutting jobs: poultry, meat or fish and I found that slicing carrots or cutting into beets or butternut squash is like cutting into butter and it is a cinch to brunoise (cut into tiny dices) or julienne veggies!

I just received this knife and I am amazed by it. It is by far the very best knife I have ever used. The craftsmanship is amazing and the knife is perfectly balanced and beautiful to look at. This is a true piece of art that every chef should have in their kitchen. I am going to get the rest of the set just as soon as I can.

This is the second Ergo Chef chef’s knife I bought for myself (the first was the PRO Series). I bought this because I really love the updated design and hollow grounds, and the photos don’t do it justice. It’s a gorgeous, very well made, high quality knife. The handle fits well in my hand, it’s sturdy and well balanced, and the blade is sharp and cuts smoothly. Ergo Chef are the only knives I buy now. I appreciate that the handles are ergonomically designed because I use a computer all day long and the ergonomic handle relieves stress from cutting. I like them so much I give them as gifts to my friends and family members. I used to be scared to use a big knife until I used an Ergo Chef chef’s knife - it is very stable and very sturdy and the sharp edge makes preparing meals easier. I like the high quality and ergonomic design of this knife and highly recommend it.

I'd owned a single Ergo Chef knife before so leaped at the opportunity of acquiring these shiny new ones. I have the 8" chef, 6" utility (x2) and the paring knife.. The steel cuts beautifully and having been shown how to cut (fortunate enough to see the knives demonstrated at a show) we are becoming very professional at home. The knives are beautifully balanced and feel like an extension of the arm making the cutting action so much easier. I now find myself looking for recipes that require extra cutting.

My only complaint? I have a knife drawer and they're far too beautiful to be tucked away!
