This thorough collection of recipes keeps health-conscious eating simple by making the most of fresh vegetables, lean meats and low-fat dairy products. Author Jacobi (12 Best Foods Cookbook) focuses on classic preparations with inventive twists: egg salad is brightened by curried onions, and citrus and capers turn that self-righteous standby kale into an appealing side dish. Main courses are wholesome, hearty, and frequently vegetarian, like Crisp Buckwheat Polenta with Mushroom Topping, which transforms humble ingredients into a decadent, crisp-salty treat. However, the book does include several meat and fish recipes, including Persian Chicken with Sour Cherries, a whole bird stewed in an exotic mix of fruit and spices, and Roasted Salmon with Moroccan Tomato Compote, which benefits enormously from the addition of fresh summer tomatoes (the sauce that pools at the bottom of the plate begs to be mopped up with a thick piece of bread-whole-wheat, of course). Since virtuous does not always mean abstemious, Jacobi concludes with a nice assortment of desserts, including offbeat options like Nutty Popcorn Bundt Ring and Tropical Fruit Salad with White Tea Syrup. Dana Jacobi created the first food blog, The Bytable Feast, and shared it on Prodigy, where she was food editor and, from 1988-1993, the first food writer to publish only digitally. Still a leader, her cookbooks are loved for providing delicious healthy food uniquely appealing to both conventional and natural foods cooks.

Both under her name and for Williams-Sonoma, Dana is known for sharing abundant information along with easy recipes. Twice nominated for a James Beard Foundation Cookbook Award, she also writes Something Different, a digital column for the American Institute for Cancer Research, teaches, and her articles have appeared in The New York Times, Food & Wine, Cooking Light, and Prevention magazines.

I purchased this book primarily because I met the author at a Nutrition and Health conference and wanted to support her venture. But . . . When it came and I had a chance to spend some time with it I was amazed!!! It is full of simple, yet creative ways to make healthy eating also enjoyable eating. In addition it is full of wonderful tips that would take someone like myself years to gather on my own. An absolute must for anyone that loves to cook as well as those of us that are challenged by it. It is difficult to try and keep cooking and preparing food healthy yet enjoyable - this books makes it extremely simple. A must have!!

I love this cookbook! The beginning of the book starts out with great informative information about each essential food. And then when choosing a dish, you know what health benefits you're getting from the ingredient(s).
The Red Cabbage with Sour Cherries isn't normally something I'd make, but it sounded intriguing and boy, is it wonderful!!! Along with the cabbage, I made the Turkey & Spinach Mini-Meat Loaves...fantastic and so easy to prepare!!! My husband has already asked me to make both again and to serve at a dinner party.

I have a few Dana Jacobi cookbooks and was very excited to see this new one. I always feel confident that her recipes will not only be healthy, but unique and tasty as well.

I bought this cookbook because it was advertising tasty ways to cook the foods that were best for you. It was a pleasant surprise to me that the introduction includes a 'pantry checklist' that isn't ridiculously elaborate - important because I live in a rural area with a less-than-stellar grocery. Not only that, there are GREAT technique explanations and sidebars on (for example) different types of salmon. Someone FINALLY explaining WHY they chose the ingredients they did!

Unlike the Rachael Ray books, these recipes don't promise to be done in 30 minutes. On the plus side, while almost all of RR's recipes take me at least 40 minutes, I haven't made a recipe from THIS book yet that takes more than a half an hour.

Everything I've made has been FANTASTIC - rave reviews from friends and family - and I can't wait to make my way through the entire book! Can't recommend this book highly enough.
