Over time, my family has changed its opinion a bit about this polenta. It is an extremely fine grind, too fine for our taste. Bob's Red Mill polenta can be ready in ten minutes and doesn't strike us as pasty. The flavor of De la Estancia is excellent though. I have begun to use it instead of fine cornmeal in baked goods. For example, Martha Stewart has a wonderful,...

5.0 out of 5 stars Special corn translates to special polenta, May 10, 2007
This review is from: De la Estancia Organic Polenta, 1-Pound Bags (Pack of 6) (Grocery)
Hello. My name is Carl Mundt and I am the President of the company that produces de la Estancia organic polenta in Argentina - I'm obviously biased so you can take my comments with a grain of salt if you want.

A little more than 10 years ago, my wife and I decided to invest in the Argentine farming business. We found two young Argentine farmers to be our partners and we began to grow different crops. I also started to learn something about farming - I was especially interested in the crops themselves. After a few years I realized that the corn we were growing was quite different from the corn I was used to seeing in the US and Europe. Argentine corn is a subtropical corn called "long cycle" which meant that it grows in the fields for 6 months as opposed to the 3 month growing cycle of common corn. It was also extremely happy corn because the nights in the foothills of the Andes are cool and, besides lots of rain and hot sunshine, corn likes cool nights. This special type of corn is much harder, more vividly yellow and has both a much lower starch content and a higher protein level than corn from more temperate climates.

Putting two and two together I realized that polenta made from Argentine corn would be far superior to polenta made from common corn. It would be brighter yellow in color and it could be ground to a finer consistency. But most important, the low starch level meant that our polenta would cook in just one minute. It cooks so fast because there is basically no starch to incorporate into the cooking liquid. That is what takes so long in cooking other polentas.

I also want to emphasize that our polenta is not pre-cooked as is the case for the polenta in the tubes. Nor it is partially pre-cooked and then reconstituted as is the case for the "instant" polentas. De la Estancia polenta is pure ground corn that has never been processed or treated in any way. It just cooks fast naturally.

I hope that you enjoy preparing and serving our polenta as much as I have enjoyed bringing it to the US.

5.0 out of 5 stars great great great polenta, February 15, 2007
This review is from: De la Estancia Organic Polenta, 1-Pound Bags (Pack of 6) (Grocery)
smooth, great mouth feel, taste, easy to prepare, works well in cornmeal muffins and other baking. Best polenta I've ever had. If you like polenta you should really try this because this is not just another polenta.

This is made with long cycle corn which takes longer to grow, is not genetically modified, has less starch, and makes a better polenta.

Long cycle corn is closer to what original corn used to be before it was bred to grow quick. This corn is only able to grow in a few parts of the world. This particular corn is grown in Argentina in view of the Andes Mountains.

thank you for making this product available Amazon.

5.0 out of 5 stars Great for Camping!, September 10, 2007

Delicious polenta, quick and very easy to cook. We enjoyed it with garlic, olive oil, basil, and sundried tomatoes, and formed the leftovers into patties the next morning which we fried in butter. A tasty, rib-sticking treat!

5.0 out of 5 stars Outstanding Taste and Texture, September 4, 2007
This review is from: De la Estancia Organic Polenta, 1-Pound Bags (Pack of 6) (Grocery)
This is the best polenta I have ever had bar none. I originally tried it because I review products for a health magazine. This is the only edible product that received a 10. (out of 10). Preparation is a snap, taste, color, and texture are superb, and it makes the best corn bread and corn pudding you will ever have. This product is the quality you would expect experiencing at a gourmet restaurant.

5.0 out of 5 stars Just like home, April 3, 2010

I'm from Brazil and grown up with a lot of polenta but after coming to US i had problems finding something that produced the same creamy texture i was used to. I didnt want to use regular corn since most of it is genetically modified. I stayed with local ground heirloom corn from small farms which is very tasty but didnt remind of home.
i was very happy when i come across De La Estancia polenta. Now everytime I'm homesick I can just scoop some in a pot and its ready in a minute. And it works great for baking too.

This is the first polenta that I've actually tried, which is why I didn't feel justified giving it 5 stars, since I have nothing to compare it to. I love the fact that this product is organic, and is labeled gluten free (since my boyfriend has celiac's disease--I wish more products were labeled this way). The polenta is creamy and tasty. I'd recommend cooking it much longer than the directions suggest, as the added cooking time allows the flavors to develop.

5.0 out of 5 stars really like this stuff, December 12, 2010

My perspective on this product comes from having visited Bergamo, Italy many times and eaten the polenta there. I don't have the time or energy to cook polenta like they do there (cooper pot, constant stirring, open fire). But this product is a delicious alternative.

5.0 out of 5 stars My favorite polenta, July 21, 2010
This review is from: De la Estancia Organic Polenta, 1-Pound Bags (Pack of 6) (Grocery)
This polenta has a great flavor and cooks in less than five minutes. The texture is creamy and not too grainy. I love that it's organic, especially since corn is one of the most genetically modified crops. This polenta is super with sun-dried tomatoes, basil, and garlic for dinner, and it's great for breakfast with fresh blueberries mixed in and a light pouring of maple syrup. I've tried other polenta brands, and this one is definitely the smoothest.

De la Estancia Organic Polenta is a wonderful product! It tastes delicious, and it's organic and non-GMO! Thank Heaven for companies that still have not compromised real, natural foods and make it available to us all. Please support them! There aren't many of them around any more!
