This companion volume to Fox's Morning Food: Cafe Beaujolais (LJ 3/15/90) and her earlier Cafe Beaujolais (Ten Speed, 1985) presents recipes that are served at dinner at this widely acclaimed restaurant in Mendocino, CA. Kump is the dinner chef-and husband of Fox, who opened the cafe in the late 1970s (readers will be disappointed to learn that they serve only dinner now, for Margaret's "morning food" is famous)-and his style is more formal than hers. Kump's background of classic French training and a love of Thai and Mexican cuisines, among others, are reflected in such recipes as Saut?ed Foie Gras with Garlic Confit Puree, Roast Chicken with Fresh Ginger Sauce, and Yucatan-Thai Crab Cakes. Many of the recipes are quite complicated, but the instructions are very detailed and helpful (and if the sidebars sometimes run long, they are informative). Recommended for area libraries and most other larger collections.

Coming from quite a pedigree (son of Peter Kump and having worked with the likes of Robuchonn and Jacques Cagna) the young chef is hired and then marries the ownder of Cafe Beujolais.

Margaret Fox has produced books on this restaurants Morning Food and another, and here collaborates with her chef/husband on Evening Recipes.

Organized into classic dining sequence of Appetizers to Desserts, there are some good recipes in here to try: Buckwheat Hazelnut Bread; Toasted Goat Cheese Salad; Pear and Apple Crisp; Bittersweet Chocolate Raspberry Milefeuilles; and a Roast Cornish Hen with Apricot Marsala Sauce that is superb!

What I enjoy about this is the sidebar discussion that accompanies each recipe. Here is told about its development, technique, tips, etc.

Throughout the book, the author stresses that he didn't have room for his very best recipes, but that, for $20 (I think) you can order them from him. I tried to, but the address cited was that of Cafe Beaujolais, and they replied with "Sorry, he moved." They won't even forward such mail. So it was a total waste. There are tons of great cookbooks on the market; purchase those that try to include their best recipes.
