Excalibur EXD500W 5 Tray Excalibur White

The EXD500W by Excalibur comes with 5 trays, a total of 8 square feet of drying space. The adjustable thermostat temperature control ranges from 95◦F to 155◦F making it safe to dehydrate meat for jerky. The fan, heating element and thermostat are in the back of the unit, so cool air is drawn in, heated and then distributed evenly over each tray. This patented Parallex Horizontal Airflow is exclusive to Excalibur and helps the food to dehydrate faster, retain more nutrients and look and taste better, without tray rotation. Since 1973, Excalibur has been made in Sacramento, California. Over the years, Excalibur has taken the lead in advancements related to the mechanics of dehydration including air flow, heating dynamics, and materials.

Any dehydrator will dry food. An Excalibur dries better, faster & safer thanks to Excalibur's patented Hyperwave Fluctuation technology. Ordinary dehydrators produce constant, unchanging heat causing 'case hardening.' Basically a dry surface with moisture trapped inside – the perfect environment for yeast, mold and bacteria growth. With the Excalibur Hyperwave Fluctuation technology the air temperature fluctuates up and the food's surface moisture evaporates, then the air temperature fluctuates down and the inner moisture moves to the drier surface. This keeps the food temperature low enough to keep the enzymes active, but the air temperature gets high enough to dry food, overcoming yeast, mold, and spoilage.

Since the Excalibur is pretty much static as far as what you get is what you get, if you want more room you will have to buy another larger machine.

I dehydrate my own dried fruit & veggie snacks, kale chips, my own granola, fruit roll-ups, candied walnuts, almonds, pecans, etc. I have saved so much money with this dehydrator. I can make a lot at once. You don't have to rotate trays. It dries great. My neighbor makes his jerky in this. He says it's the only dehydrator that is safe for drying meat for jerky because of the temperature. It's made in the USA too.

This dehydrator is perfect for me. My friend's have Excalibur dehydrators. When I checked out the prices, I was concerned as I don't have an unlimited income. I bought the Nesco but the stacking trays and the uneven heating was a nightmare. My girlfriend had to rotate the trays and I wasn't too happy because the temperature wasn't high enough for meat - even though we tried to get the temperature high enough - to no avail! Back to the store it went. (Nesco FD 1040 1000 watt Gardenmaster Dehydrator Amazon carries this model which is similar to the other 5-tray unit, I think the only difference is a shorter warranty. Big deal. Anyway, this Excalibur was perfect for us. It's an non-timer version, which saved us a ton of money. It has plenty of drying space. It's SUPER easy to clean-up. I can make my jerky! No rotating trays during the drying time. And it's Excalibur - Made in USA! We definitely recommend this product.

I do a lot of cooking and baking so I know what good ingredients can cost. Good dried fruit can cost $15 a pound or more which can put a sizable dent in your budget, particularly during the holiday season. I've been asking myself how I can get a jump on those costs for a a while now, and I think I may have found the answer with the Excalibur. Last night I dried a pound of black cherries (about $2 a pound fresh, $13 dried) and was very pleased with the results. By buying in-season fruit and drying it, I will save a substantial amount of money even with the energy costs which I'm figuring at well under $0.25 for the batch based on current local energy rates. This morning, after I bagged up the cherries, I put some stale saltines in the unit for an hour, and they came out tasting as good as if I'd just bought them. That's nearly a whole stack of crackers I don't have to throw out.

The Excalibur dehydrator comes with two books. The smaller one gives you a quick and dirty guide on how to use the unit to dehydrate various types of food along with some ruminations on "living food." I haven't really paid much attention to the latter, being a nuts-and-bolts sort of gal when it comes to the hands-on part of cooking. But I imagine it will be of interest to people who embrace the whole raw food scene. The larger one is a more detailed explanation of the hows, how longs, and how hots. It also appears that you can use the Excalibur dehydrator to do a lot more than stocking up on fruitcake ingredients and turning meat into jerky. You can make fruit leathers, fruit and vegetable powders, raise bread dough, make yogurt and even cheese in the Excalibur. That makes it a pretty handy machine to have around the house.

The Excalibur EXD500B 5 Tray Dehydrator, Black isn't my first experience with dehydrating food or dehydrators. I've had experience with the Oster FPSTDH0101 4-Tray Electric Food Dehydrator, White and the Nesco FD-37A American Harvest Food Dehydrator, 400-watt. To be honest, I'd been unsatisfied with both and almost gave up when the offer came to review this model.

Currently the cost of the Excalibur EXD500B is currently listed at $184.19. A bit pricy, I know. There are other models ranging from $159.99 to $223.95 (as of 12/03/2013.) Still pricy and if you've had a bad experience with dehydrators, this might seem like a ridiculous amount to spend. All dehydrators are the same, right? Wrong! How the air circulates around the food makes a huge difference. My dried veggies went from leathery (with the previous machines) to crispy.

Another plus, is the trays have a polyscreen insert that can easily be removed for cleaning. These inserts sit in a plastic frame and the trays slide in and out of the machine. With my previous dehydrators, the trays stacked on top of each other. The motor/fan was either on top or on bottom. With the Excalibur, the motor and fan are located in the back, positioning the fan at the side (or back). This allows more air is to flow through the trays. The fan is fairly loud, but so were my other two dehydrators.

Back to the trays. This model has five 15' x 15" trays. The whole thing (16-1/2" x 19") is fairly large.

I've had a Nesco FD-75PR Snackmaster Pro Food Dehydrator for 3 1/2 years and it has worked very well. Unfortunately about a year or so ago my boyfriend starting using it to dry his hops in and after that I gave up using it for my own items because the scent stuck around in the trays.

The Excalibur EXD500B 5 Tray Dehydrator, Black is a beast of a machine! But because it is square instead of round, it fits much better on my counter top. The five trays are huge and I've found that because they are square, it makes it much easier to arrange the items I'm drying. The temperature control on the top is easy to read and even simpler to use with the book Preserve It Naturally: A Complete Guide to Food Dehydration. The motor is a bit quieter than my other dehydrator which is nice and it also seems to do finish drying food faster, which I just assume is due to the design. Clean up is easy as I just rinse and air dry the trays.

Of course the best part about the Excalibur is what you can make! I immediately tried 3 recipes over the first weekend I received it to get an idea of how it might be better than my Nesco. Dried fruit was first; I did a tray of strawberries, kiwis, blueberries, peaches and bananas. All turned out wonderful and I just removed each tray as it was done and let the others continue drying. That was much easier to do on this one since my Nesco would have required me to unstack, not just pull out a tray.
