Excalibur EXD500W 5 Tray Excalibur White

The EXD500W by Excalibur comes with 5 trays, a total of 8 square feet of drying space. The adjustable thermostat temperature control ranges from 95◦F to 155◦F making it safe to dehydrate meat for jerky. The fan, heating element and thermostat are in the back of the unit, so cool air is drawn in, heated and then distributed evenly over each tray. This patented Parallex Horizontal Airflow is exclusive to Excalibur and helps the food to dehydrate faster, retain more nutrients and look and taste better, without tray rotation. Since 1973, Excalibur has been made in Sacramento, California. Over the years, Excalibur has taken the lead in advancements related to the mechanics of dehydration including air flow, heating dynamics, and materials.

Any dehydrator will dry food. An Excalibur dries better, faster & safer thanks to Excalibur's patented Hyperwave Fluctuation technology. Ordinary dehydrators produce constant, unchanging heat causing 'case hardening.' Basically a dry surface with moisture trapped inside – the perfect environment for yeast, mold and bacteria growth. With the Excalibur Hyperwave Fluctuation technology the air temperature fluctuates up and the food's surface moisture evaporates, then the air temperature fluctuates down and the inner moisture moves to the drier surface. This keeps the food temperature low enough to keep the enzymes active, but the air temperature gets high enough to dry food, overcoming yeast, mold, and spoilage.

Since the Excalibur is pretty much static as far as what you get is what you get, if you want more room you will have to buy another larger machine.

I dehydrate my own dried fruit & veggie snacks, kale chips, my own granola, fruit roll-ups, candied walnuts, almonds, pecans, etc. I have saved so much money with this dehydrator. I can make a lot at once. You don't have to rotate trays. It dries great. My neighbor makes his jerky in this. He says it's the only dehydrator that is safe for drying meat for jerky because of the temperature. It's made in the USA too.

I do a lot of cooking and baking so I know what good ingredients can cost. Good dried fruit can cost $15 a pound or more which can put a sizable dent in your budget, particularly during the holiday season. I've been asking myself how I can get a jump on those costs for a a while now, and I think I may have found the answer with the Excalibur. Last night I dried a pound of black cherries (about $2 a pound fresh, $13 dried) and was very pleased with the results. By buying in-season fruit and drying it, I will save a substantial amount of money even with the energy costs which I'm figuring at well under $0.25 for the batch based on current local energy rates. This morning, after I bagged up the cherries, I put some stale saltines in the unit for an hour, and they came out tasting as good as if I'd just bought them. That's nearly a whole stack of crackers I don't have to throw out.

The Excalibur dehydrator comes with two books. The smaller one gives you a quick and dirty guide on how to use the unit to dehydrate various types of food along with some ruminations on "living food." I haven't really paid much attention to the latter, being a nuts-and-bolts sort of gal when it comes to the hands-on part of cooking. But I imagine it will be of interest to people who embrace the whole raw food scene. The larger one is a more detailed explanation of the hows, how longs, and how hots. It also appears that you can use the Excalibur dehydrator to do a lot more than stocking up on fruitcake ingredients and turning meat into jerky. You can make fruit leathers, fruit and vegetable powders, raise bread dough, make yogurt and even cheese in the Excalibur. That makes it a pretty handy machine to have around the house.

This dehydrator is perfect for me. My friend's have Excalibur dehydrators. When I checked out the prices, I was concerned as I don't have an unlimited income. I bought the Nesco but the stacking trays and the uneven heating was a nightmare. My girlfriend had to rotate the trays and I wasn't too happy because the temperature wasn't high enough for meat - even though we tried to get the temperature high enough - to no avail! Back to the store it went. (Nesco FD 1040 1000 watt Gardenmaster Dehydrator Amazon carries this model which is similar to the other 5-tray unit, I think the only difference is a shorter warranty. Big deal. Anyway, this Excalibur was perfect for us. It's an non-timer version, which saved us a ton of money. It has plenty of drying space. It's SUPER easy to clean-up. I can make my jerky! No rotating trays during the drying time. And it's Excalibur - Made in USA! We definitely recommend this product.

This dehydrator is WONDERFUL. I cannot believe some of the reviews were negative.
The unit arrived on time and it works perfectly. I haven't had any experience with their customer relations dept. so I cannot comment on that but their product is REALLY good. I made two batches of beef jerky and it did a perfect job. The plastic screens are easily cleaned in the top shelf of my dishwasher. Commercial jerky has waaaay too much salt so I used this recipe. It was yummy.

My Low Salt Beef Jerky:

THE MEAT:* Steaks - Top Round, Round, or Sirloin Tip (4 – 5 lbs.)
*Flank Steak and other cuts are a little too fatty. Use lean steaks or roasts.
Trim fat and cut into 1” to 1½” strips (Note: Lay meat flat in your freezer for 30 minutes – makes slicing easier.) Cut cross grain, the jerky will be tender, (with the grain it’s very tough). Place in ZipLoc bags and marinate overnight

The Marinade:
Low Sodium Soy Sauce – ¾ cup (or use Teriyaki Sauce)
Worcestershire Sauce ¼ cup
Brown Sugar – 2 TBS (or honey)
Salt – 2 tsps (or ½ tsp per pound of meat) – (Omit for lower salt.)
Black Pepper – 1 tsp – (omit if you don’t like black pepper.)
Garlic Powder – 1 TBS
Onion Powder - 1 TBS
Cumin – 1 tsp
Cayenne Pepper – ¼ tsp. (½ tsp. if you like it spicy!)
Plus 2 or 3 TBS liquid smoke (optional)

Place meat strips in ZipLoc bags. Mix to coat the meat thoroughly with the marinade and place in refrigerator. Marinate overnight (turning occasionally). The next day:
Remove the meat from the marinade.
Place strips in dehydrator and run @ 165º F, for 12+ hrs.

Storing: Reduced Salt Jerky must be kept in freezer or refrigerator or it will spoil.

I was doubtful that this was both worth the money and as easy as everyone said. Boy, am I glad I was so very wrong...this is one of the better purchases I have made. While so many of my Amazon purchases (TV, Tools, ETC) have been excellent and standard "store" items so I knew what I was getting beforehand, this was new to me as I had one many, many years ago. To much work to use AND CLEAN...with so-so results...

This one is "just plug and go" with EASY CLEAN-UP to boot....Gold Box Deals, or I would not have tried due to the poor experiences previously. Goes to show ya, you can teach an old dog new things...<GRIN>...
