Excalibur EXD900B 9 Tray Excalibur Black

The EXD900B by Excalibur comes with 9 trays, a total of 15 square feet of drying space. The adjustable thermostat temperature control ranges from 95?F to 155?F making it safe to dehydrate meat for jerky. The fan, heating element and thermostat are in the back of the unit, so cool air is drawn in, heated and then distributed evenly over each tray. This patented Parallex Horizontal Airflow is exclusive to Excalibur and helps the food to dehydrate faster, retain more nutrients and look and taste better, without tray rotation. Since 1973, Excalibur has been made in Sacramento, California. Over the years, Excalibur has taken the lead in advancements related to the mechanics of dehydration including air flow, heating dynamics, and materials.

Any dehydrator will dry food. An Excalibur dries better, faster & safer thanks to Excalibur's patented Hyperwave Fluctuation technology. Ordinary dehydrators produce constant, unchanging heat causing "case hardening." Basically a dry surface with moisture trapped inside – the perfect environment for yeast, mold and bacteria growth. With the Excalibur Hyperwave Fluctuation technology the air temperature fluctuates up and the food's surface moisture evaporates, then the air temperature fluctuates down and the inner moisture moves to the drier surface. This keeps the food temperature low enough to keep the enzymes active, but the air temperature gets high enough to dry food, overcoming yeast, mold, and spoilage.

This is a great dehydrator. I used to have one of those donut shaped ones where each level is supported by the level below it and there is a big hole through the middle. They cost less but the shape is pretty awkward and they don't really save too much space compared to this more logical square shape with no hole running through the middle. This is a big beast that takes up a lot of room, though. It needs room to open the front and slide the trays all the way out and of course it needs to be by an outlet. I actually have a table set up in my kitchen that is JUST for this dehydrator plus a few things that get stored on the far side of the table, which is a little awkward but otherwise I wouldn't be able to slide the drawers out. Of course, the five tray unit is going to take up just as much space on a counter or table as this nine tray one, it's just shorter, so I suggest this one if you're hesitating between the two.
I also suggest getting silicone liner sheets for this thing. They don't come with but are useful for so much stuff, like raw foodie tortillas or fruit rollups. You don't need them for kale chips, though, and that is probably my favorite thing to make in the dehydrator. Cheezy kale chips! Very economical compared to buying them in the store.
I find it a pain to clean the racks on this thing, but mostly because they are big and unwieldy and if you are using the silicone sheets then you have the base shelf, the mesh liner AND the silicone sheet...times 9 trays is a lot of big, awkward washing up.
Oh, this is also great for proofing bread dough. I like to freeze dough in smaller size amounts, like rolls and mini loaves, and the dehydrator helps me thaw and proof them a lot faster than otherwise.

Just upgraded from the Excalibur 5 tray to this one. Soooo much more room! Even if you don't think you'll use all the trays you always seem to find just a few more things to add...since you have it running anyways! ;) Don't really know what else I can say about this that hasn't already been said before. I like it, for those that care about the color it isn't a flat black...it's a sparkly, shiny black. It's big, had to do some counter rearranging since it doesn't fit in my bottom cupboard like the 5 tray did. I was able to rise a jelly roll pan of pizza dough on top while it ran full of fruit and the dough rose beautifully. Kitchen appliance multi-tasking! :)

The books that are included are really nice too. Full of tips and recipes. This 9 tray dehydrator has a 5 year warranty and the company states that they will replace whatever goes wrong, just pay for the return shipping. This seems well made so I hope I will get many years of use out of it.

there are a lot of dehydrators out there but for box styles no on beats excaliber. yes there is a lot the company could do to make things better especially for the price, but im not planning on buying a new one for the next 10-15 years and this does its job well. there is a off switch. no timer but its easy to just but things in over night or make them earlier in the day if they only take a few hours. the people who make it sound like these are the worst thing ever most likely would not be happy with anything because it does not make diamonds out of peanuts. its not a miracle worker but it does its job.if the plastic bothers you they have a stainless steel option but you will pay for it and really, yes we should all watch our plastic use ( BPA or not!) but some exposure really is not going to kill us and long as we limit our exposure in other areas.

This is my second dehydrator, I also have a Nesco unit. They both work very well, but I do have to say the Excalibur is more convenient because I can remove the front door and slide the trays in and out where on my Nesco unit I have to unstack the trays. The Excalibur also blows from the back to the front and not from the top to the bottom like my Nesco. Maybe that gives less intermingling of flavors/smells when drying a load of different items? Small difference, but they really are very simple machines so you will not be seeing groundbreaking differences between manufacturers.

I normally run this unit on the kitchen counter. I will give you a warning if this is your first dehydrator, if you have the windows closed and the AC on, do not dry beef jerky or try to dehydrate garlic in the kitchen. Trust me on that. I put the unit in the garage when I do those items because they can really add some strong smells to the house. I made a batch of smoked garlic powder and then used the dehydrator to thoroughly dry it before I ground it and put it in jars. While the garlic tasted fantastic, the house smelled of smoked garlic for days. The Wife was not very happy.

This unit is easy to clean and the controls are pretty simple and straight forward. I am not sure what else I can say about this, except if you are looking to start dehydrating you probably cannot go wrong with this unit.

ps: If you have never tried smoked garlic powder, you really need to. And its pretty easy to make too.
