Directions
Mung Bean Fettuccine in Pesto Sauce: 1 pack of Explore Asian mung bean fettuccine 50g butter or margarine. 2 tbsp sifted flour. 2 cups milk. 100 g grated yellow cheese. 3-4 tbsp pesto garlic. Salt and pepper. Cooking instructions: Boil 8 cups of water, add fettuccine and simmer gently for 6-8 minutes or until cooked through. Immediately rinse under cold running water. In a separate saucepan, melt the butter then remove saucepan from heat, add flour and stir continuously until mixture becomes smo

This product, and the black bean spaghetti, are both delicious! It's a great way to add more high quality protein to your diet. It tastes more like a noodle than a pasta. It's hearty without being woody, like some of the whole wheat pastas tend to be. We like it in a stir fry to replace rice. We use the black bean spaghetti instead of spaghetti with pasta sauce and it's great. Not just an "adequate substitution" but really darn good!

I love this!!!! It's gluten-free, high in protein, and has a great texture! Now that I've found it, I have it at least once a week. I don't even bother with sauce: I usually put a little olive oil or Earth Balance soy-free spread on it, along with granulated garlic, and maybe some nutritional yeast and a sprinkle of sea salt. YUM!! One package is enough for three or four servings, but usually more like 2 - 2 1/2 for me. :D

This is the latest popular product in the raw vegan community. The best way to eat this if you're wanting the most nutrition & best flavor is by soaking them in water for 2-24 hr. minimum in the refrigerator. They're amazingly delicious this way. A nut butter sauce (almond, hemp, etc) compliments this well, but there's so many different things you can do. You can even keep it simple and eat them alone, with a dash of sea salt or olive oil.

I found these years ago in a store chain and used them a lot. Then they disappeared and were not to be found anywhere. So glad to have found them again. I love marinara and Alfredo sauces but I don't eat much wheat. They cook easily and sauce coats them well. When fully cooked, they are a bit chewy, like al dente noodles. The taste and texture are far superior to rice or other alternative noodles (for me), They are extremely filling (I eat about 1/3 as much as with regular noodles) and I stay full for a long time without the sleepy effect. The black bean spaghetti is wonderful as well. They both refrigerate well, so perfect to cook a batch and have for lunch for a few meals. I bought a couple boxes.

The original recipe contained only Mung Beans and it was loaded with protein and fiber (11 grams). It tasted great and was perfect overall. They discontinued that recipe and have now blended in SOY. So in addition to that garbage filler, it has now been stripped of both protein and fiber. The fiber is only now a fraction of what it was before. Very disappointed they changed the recipe.
