Give this pasta a shot. It's pretty tasty and has to be better for you than a belly full of white carbs.
I have Gestational diabetes, and was told by a dietician that I can only eat 45 grams of net carbohydrates per main meal, so that it would not cause my blood sugar level to spike too high. I am extremely careful with my net carb intake, and I have a blood glucose meter I use, testing my blood before each meal and 1 hour after my main meal.
When I saw this product carried by Costco, I was amazed the box said one serving size ( approx. 1.5 cups cooked) was equal to 5 net carbohydrates! For example, one cup of cooked quinoa, rice, potatoes, or pasta equals 45 grams of net carbohydrates. I thought this was too good to be true.
I cooked it up tonight with 1 cup of tomato sauce mixed with chicken and mushrooms. After eating the full serving size, I was super full. But, I was worried the nutritional information on the box was inaccurate and maybe my blood sugar level was going through the roof. 1 hour after my dinner, I tested my blood sugar level and was shocked, it was 5.1 mmol/L or 91.8 mg/dl. Never, has my blood sugar levels been so good an hour after a main meal ( normally it's around 6.4 mmol/L or 122 mg/dl).
I was so excited that I knew I had to post this review right away for other people out there that have to monitor their blood sugar levels!
To be completely honest, I don't love the texture of this pasta, which is why I'm only giving it 4 stars. However, if you miss eating a large plate of pasta that would typically be served in a restaurant, then this is great alternative. You can eat a lot more and it won't cause a blood sugar spike. I don't like Shirataki noodles, so this one is a much better substitute in my opinion.
