That paradoxical fragment of New York State which includes such diversities as Brooklyn, Coney Island and the palaces of many moneyed moguls happens to also be one of the best places in the world to raise ducks. In fact, a tiny area of eastern Long Island produces nearly two thirds of all the ducklings eaten in America. Long Island Duckling, a byword amongst gourmets, is of Chinese descent. Chinese Americans still rely on the Imperial Pekin Duck as the chief ingredient of many a tasty dish - a duck, that is, out of Pekin by way of Suffolk County, New York. The ducklings of Long Island, in their short, heedless lives, are pampered beyond reason.
