A traditional holiday drink, eggnog has its roots in European traditions of wine and milk punches. In the new world rum was used instead of wine. George Washington loved eggnog and developed his own recipe that included whiskey, rum and sherry. Although most often consumed at holidays, the delicious flavors of eggnog can be enjoyed year round with our eggnog flavor extract. This creamy flavor with hints of rum and nutmeg can be substituted for vanilla extract in any recipe. All great cooking starts with the same thing, great ingredients. Our premium quality extracts and liquid flavors give you an extra degree of flavor in all your cooking and baking. They are specially formulated to withstand the high heat of baking and still bring you maximum flavor. Our goal is to produce the truest flavors possible. When possible we use natural flavor ingredients. We also use top-quality artificial flavors when natural ingredients do not have sufficient flavor strength or do not maintain true flavor over time.

This extract really works well. I used two tablespoons to make a half gallon of excellent eggnog flavored yoghurt. Most extracts (e.g., vanilla) do not work well for this application.

I ordered this because of strongly positive reviews, but I think it must have been a long time since those reviewers drank real eggnog! Also a problem that it doesn't come with measurement recommendations.

I received my bottle today and it was extremely disappointing for what I took it to be - egg nog extract which makes milk taste like commercial egg nog. That it isn't, but it is a fair approximation of what milk would taste like if it were flavored with brandy, as is called for in many recipes. But, you can buy a fifth $26.2 ounces) of decent brandy for $30 or so ($1.15 per ounce) whereas this product costs $3.03 per ounce in the smallest bottle, so unless you're a teetotaler use brandy instead and avoid the chemicals in this product.

But, I learned some time ago that the taste of commercial egg could be absolutely duplicated with McCormick's Brand brandy extract - taste was spot on, and with some organic 0% milk (organic both because it tastes better and because it's pasteurized at about 100 degrees hotter than regular milk so develops a degree of caramelization which makes it taste sweeter but not like a caramel), 2-3 packets of Splenda and the extract to taste (about 1/2 teaspoon for me in a 20 ounce glass of milk, and a bit of yellow food color if you want total authenticity (I don't) and you have the spot-on taste of commercial eggnog without the horrendous calories.

Unfortunately McCormick recently stopped making their brandy extract, and it's not available even from food service suppliers, but their rum extract in the above recipe is close. One wonders whether in this world where consumer tastes are routinely sacrificed to ROI (return on investment) too many people were making the above recipe and the commercial egg makers and customers of McCormick were suffering. Certainly the McCormick explanation on its website for its demise is worse than mealy-mouthed.
