I recently got Fat Daddio's Jelly Roll pan. It seems like a good sturdy pan that performs well.
HOWEVER I noticed something odd. Even though I thoroughly cleaned the pan after use, the metal looks mottled and discolored. When I wipe the pan with a dry paper towel, it picks up some gray stuff - possibly aluminum? Does anyone know why this would happen and what I should do?

UPDATE: thanks to those who replied.

I lowered rating from 4-star to 3-star because the pan looks just dreadful. I'm still cooking with it (not sure if that is a good idea) but it is VERY hard to clean (hand-wash). I would love to find a rimmed baking sheet that can withstand high temperatures (500 degrees) for roasting vegetables. Any suggestions?

We bought this product based on the claims that finish would make it easy to clean. When it arrived it had a large sticker right in the center of the cooking side that when peeled off, left a nasty residue that refused to come off. Not something I would want cooked into my food. After much scrubbing we got most of it. After one cook session with a high heat oil, the pan was stained and unable to be cleaned unless we used a stainless steel scrubber, something the company advised against because it would damage the finish. So, how do you clean it?

Rather than let the pan get nasty, we had to start using parchment paper. In fact I would not use this pan unless you use parchment paper.

Otherwise, the pan seems sturdy and strong. To bad keeping it clean is an issue.

We also tried the lodge logic jumbo oven platter and are very happy with it. We have the brush and it only takes a few scrubs to get the cast iron pan clean and we recommend that option over this one.

I want to like anodized aluminum due to it's safety but I can't. The feel of it is almost like nails on a chalkboard to both my husband and I both. Also, I am disappointed that this was made in China. Will send back.

This is the second Jelly Roll Pan I have bought from Fat Daddio's. I have several other pans from them including a large muffin pan and round and square cake pans.

I was considering the USA Pan to replace what WAS a non-stick pan that I used for everything. I have decided I hate non-stick pans because they do not last and they do not clean well. After reading the USA Pan reviews, I decided I would try the Fat Daddio's since I love the other pans I have bought from them.

This pan is not technically non-stick. Cookies will not just slide off. BUT things do not stick to the pan either. (This holds true for my muffin pan and cake pans also.) It also does not burn the bottoms of what you are cooking. And it cleans up incredibly well.

I am not a big cookie baker. This pan's main job is breaded chicken (think Shake n Bake). The problem I have had with this is the juices running out from under the chicken which then bakes onto the pan. The only way to get that off the pans I have had before was to scrub it. Scrubbing the non-stick pans I have had of course ruins them. At best, I am left with a sticky goo that will never come off the pan. At worst, my non-stick coating is gone.

With THIS pan, the juices ran out from under the chicken and baked onto the pan all as usual. Using a spatula to take the chicken off was easy. Good so far.

I was going to soak the pan but I decided to try to just wash it to see if it would come clean that way. It did! I used a sponge and Dawn dish detergent and most of it came right off. I was amazed. There was still a little left so I scraped it off with my nail with no damage to the pan at all. But after I rinsed the pan I could see there was still a bit of film from the burned on stuff left.

This is indeed a good size to make Swiss Rolls and is the one that much larger than the others pans. As it is longer and wider, the presentation is better.
The wall of this is straight and so the base & top are in one straight line that makes the Swiss Roll easy to roll up without the need to cut too much at the edges to make it neat.
The pan is light and sturdy, the anodized aluminum acts like a non-stick surface. I have used it for the first time to make my Green Tea red bean Rolls and it turns out so nice. I have uploaded a photo to share.
