I recently got Fat Daddio's Jelly Roll pan. It seems like a good sturdy pan that performs well.
HOWEVER I noticed something odd. Even though I thoroughly cleaned the pan after use, the metal looks mottled and discolored. When I wipe the pan with a dry paper towel, it picks up some gray stuff - possibly aluminum? Does anyone know why this would happen and what I should do? UPDATE: thanks to those who replied. I lowered rating from 4-star to 3-star because the pan looks just dreadful. I'm still cooking with it (not sure if that is a good idea) but it is VERY hard to clean (hand-wash). I would love to find a rimmed baking sheet that can withstand high temperatures (500 degrees) for roasting vegetables. Any suggestions?

I loved these jelly roll pans. They were study, cooked evenly and never warped in the oven. My love affair ended when I noticed a scratch on one of them. I stored them in a drawer and had placed a cooling rack over it. The cooling rack is made of stainless steel and has pretty smooth feet. I don't know how but one foot caused a scratch on the jelly roll pan and exposed the metal underneath. It's much darker looking than the rest of the pan and seems to be "less anodized" aluminum. Now I don't feel comfortable using that pan without foil because I am concerned about the aluminum bleaching into the food. If I knew the pan had such a thin 'coating' (even though it's not supposed to be coated at all!) I would have been more careful with it. The quality is definitely not as great as I thought. I wrote to the manufacture about this and never got a response.
